(Not controled OCR) Because biological systems do not work in isolation, behavioral, biochemical, and physiological tests can give an overview of an individual's vital processes and reaction to stress. Two stress gradients were applied in this study, a short acute desiccation stress and a long-term density stress. These stress gradients were used to assess the usefulness of various techniques for quality assessment: namely, a standard salinity stress test, condition index, recessing speed of the scallop, adenylic energetic charge (AEC). and percentage carbohydrate content of the striated muscle. The results showed that AEC could be used effectively to measure the effect of a short-term stress. In the striated muscle. AEC levels were useful in... |

This study aims to investigate the benefits associated with traceability and its relationship to quality. Market research has been conducted in Spain, Portugal, France, UK and Germany. The results show that the expected benefits for consumers related to traceability focus on food safety and quality. Relevant information about traceability should focus on the intrinsic quality attributes highly valued by consumers and food safety. Among them, it highlights the origin, the value of which has been highly appreciated by most consumers in different countries. As regards signalling, consumers rate labelling very favourably, which would have to offer all relevant information on the intrinsic quality attributes. The implementation of technology (e.g. QR) could... |

The biology of cod reproduction is well described in the scientific literature. However, sperm biology and spermatozoa management are poorly studied in this species. Because of its recent farming expansion, a better knowledge of cod gametes is becoming especially useful. This work aimed at establishing tools to study sperm biology in cod, and also investigated the existence of changes in cod sperm quality during the spawning period. We showed that sperm concentration could be assessed using spectrophotometry at 260 nm. Sperm motility significantly decreased after a 168-h storage at 4 degrees C. A 1:9 dilution of sperm in a non-activating medium (1/3 seawater and 2/3 freshwater, osmotic pressure: 360 mOsm kg(-1)) improved sperm storage. Sperm concentration,... |

Marine fish larvae undergo major functional and morphological changes during the developmental stages and several factors can interfere with the normal development of larvae and affect fry quality. Skeletal malformations, such as spinal malformation-scoliosis, lordosis, coiled vertebral column-, missing or additional fin rays, bending opercle or jaw malformations, are frequently observed in hatchery-reared larvae. This paper reviews the effects of some nutritional components on skeletal development in larvae of a number of fish species. In the dietary lipid fraction, for instance, it was proven that the phospholipid concentration affected the spinal malformation rate in sea bass fed a compound diet from mouth opening onwards. Phosphatidylinositol, in... |

Each year, the regional network REMONOR assesses the mortality, growth and quality of cupped oysters in two age classes ("adults", 2 years old; "juveniles", 1 year old) at various stations in the main oyster farming areas in Normandy. We used the protocol established by the national network REMORA. REMONOR is implemented by the Normandy Environment Resources Laboratory (LERN) in conjunction with the Joint Association for Coastal Fisheries (SMEL). This year, a new station at Fermanville (NC01), in the north of the Manche "département», was integrated into the network. This is the first deep-water station of the regional network.... |

Fertilization of the oocyte is a critical process of sexual reproduction depending among other factors on spermatozoa functionality. Mitochondria participate in many crucial processes for spermatozoa motility and fertilizing ability. The Pacific oyster, Crassostrea gigas, is characterized by a high inter-individual variability of its reproductive success which has been shown to be partially due to the variability of gamete quality. The present study explored spermatozoa characteristics such as: i) relationships among mitochondrial functionality (ATP content, mitochondrial membrane potential (MMP), reactive oxygen species production); sperm viability (percentages of live, dying, and dead); and motility; and ii) their involvement in inter-oyster variability... |

The network REMORA by IFREMER quarterly follows each year 2 batches of Pacific cupped oysters Crassostrea gigas ("juveniles"= 1 year old; and "adults" = 2 years old) on various sites among the main French oyster areas. The network monitored 46 sites in 2004, including the 7 new sites added in 2003. The network REMORA thus assess seasonal survival, growth and quality of cupped oysters. It is a tool for trend estimations, ecosystem management and a reference frame for scientific studies. Globally speaking, the year 2004 was a good year for oyster farming, with a low mortality and a fast growth. The rearing yield (survival x growth) reached 2.0 for adults instead of 1.8 usually. However, the meat index remained close to the average inter annual data.... |

The network IFREMER/REMORA has watched every year, since 1993, from February to December, mortality, growth and quality criteria of two oyster class-size ("juveniles" of the first-year c1ass and "adults" of the second year c1ass), distributed among various stations of the French oyster areas. This has provided a quite standard and simple annual assessment of the rearing results, generally tallied with professional observations. From year to year, data series have been obtained, from which mean values (references), chronological trends or spatial differences can be analysed. Results in Brittany, from 1993 to 1998, show that, in a "normal" year, 30 g oysters grow to 60-80 g at the end of the year, with a mortality rate of 10-15%. Mortality occures mainly in... |

Gross sedimentation rates (GSRs) were monitored together with meteorological data and the main biochemical characteristics of the collected material (i.e. organic content, C, N, total proteins, carbohydrates, lipids and available proteins) over a three year cycle at a shallow station (18 m) of the Bay of Banyuls, France. GSRs were between 0.26 (11/04/92) and 317.75 gDW m(-2) d(-1) (18/02/94). They followed an annual cycle with low and relatively constant values during spring and summer and high, variable Values during fall and winter. During the study GSRs correlated poorly (state of the sea, precipitation) or even non-significantly (wind speed) with the main meteorological parameters. GSRs correlated negatively with the organic content of the material... |

Introduction : Quality attributes of fish flesh, including food safety, organoleptic features, nutritional quality and aptitude to industrial transformation, influence consumption and acceptability of fish as food. Fish sensorial changes and texture properties are closely linked to freshness. Along with ante mortem muscle biochemistry, postmortem biochemical processes are directly linked to final quality attributes. The understanding of postmortem mechanisms is a prerequisite for an accurate control of the quality of commercialized fish by the identification of objective markers or indicators. Postmortem tenderization is one of the most important quality attributes of fish muscle. Loss of freshness is due to a complex combination of biochemical, chemical... |

France is one of the world top producers of oysters and mussels by aquaculture with 140 000 tonnes of oysters, 60 000 tonnes of mussels and an ex-farm turnover accounting to 350 millions US$ in 1996. The French market is by far the largest one in Europe for oyster and is supplied entirely by domestic production, with very little external trade. On the contrary, the French market for mussel is a very competitive one, widely open to imports. Given the evolution of market conditions due to the development of supermarkets, to the competition of new value added products and to the modification of consumer's habits, the French oyster and mussel producers have started to implement various strategies of product differentiation and of quality approach. These... |

At the end of its third year, the regional network for monitoring REMONOR, confirms the particularities of oyster from Normandy in matter of growth and quality. Results from 2 000 are globally very close of those from 1998. Mortality of adults reached 14% and juvenile 6% which represent a low death rate. For this year the most blow area is the Baie des Veys with 31% death rate at Géfosse. Observed growth this year had been weaker than the past two years despite the spring and automnal growth. At spring, the higher recorded growth rate on the West coast with 0.42% (regional average : 0.29%). This seasonal trend seems more and more obvious every year. Regarding the classification of the special oysters, despite the change of the standard, the Baie des Veys... |

The monitoring network IFREMER/REMORA in Thau lagoon is assessing, on a yearly basis, mortality, growth and quality criteria distributed among 6 stations. Samplings are carried out in March, June, September and December. 2003 is a year with a very important mortality in Mèze and Marseillan area due to an anoxy and an anormal mortality at Bouzigues Nord in december. The growth rate is always better than others French oysters areas. Afnor index is high (beetwen 13.7 and 16.5 in december), so the totality of the oysters are classifed in "Spéciales". Polydora sp. Index is important but the initial stock was first infected. The valve quality is good, with no gelatine, except on Bouzigues South. |

To be granted a product license, a vaccine must present adequate quality, safety and efficacy. Studies on these criteria often utilize target species in a laboratory setting. Vaccines that had been proven effective during laboratory analysis may not present the same features when sold on a large scale, after encountering field conditions, and furthermore, can even produce complications. Measures are already in place to detect adverse reactions as reported by veterinarians to manufacturers, so that vaccines under suspicion of failing can be identified and investigated. The present review article describes the main problems, specifically adverse reactions and lack of efficacy, that have been encountered following release of vaccines for general use. |
