การพัฒนาผลิตภัณฑ์อาหารจากแป้งกล้วย

Experiment on banana flour production is presented. The varities of banana used in this study were Klue numwa and Klue hakmuk. The effect of heat pretreatment on peeling and cutting under pressure at 250"F were investigated. It was shown that heating for I min. gave the best result on peeling and cutting. The proximate analysis at different heating times yielded similar results. However, the percent amylose content to dry basis of Klue numwa and Klue hakmuk flours were 12.06 and 10.58, respectively. The physical properties of Klue numwa and Klue hakmuk flour were also studied. Vertical abrasive whitener of the rice mill, capacity of 500 ton paddy rice per day, in the northeastern of Thailand was used to study influence of grinding abrasive surface stone on broken rice ratio and energy consumption in vertical abrasive whitener. The results showed that when abrasive surface stone was grinded, the surface structure of stone was smoother and broken rice ratio could be reduced from 30% to 26% as well as energy consumption of abrasive whitener could be reduced 6%.

อิทธิพลของวิธีการย้ายกล้าในระบบการปลูกข้าวอินทรีย์

Objective of the present study was to investigate influence of transplanting methods, namely, parachute” and wet seeded culture, on growth, i.e., height and tiller number/bunch, incidence of disease outbreak, soil quality and yield of “Hommali 105” rice cultivated organically. Results showed that the transplanting methods played insignificant role on growth as well as the incidence of disease outbreak (p0.05). However, the “parachute” transplanting method led to higher tiller numbers/bunch and rice yield than that obtained with the wet seeded method, 27 against 5 tillers/bunch (p<0.05) and 1.7 folds, respectively. Effects of extrusion conditions on the physical and functional properties of instant cereal beverage powders admixed with mulberry (Morus alba L.) leaves

On account of studying the feasibility of the production instant cereal beverage powders admixed with mulberry leaves by extrusion process, a box-behnken design of the response surface methodology (RSM) was employed to investigate the interaction of operating conditions at varying screw speed (300, 350 and 400 rpm), mulberry content (5, 10 and 15%) and feed moisture (15, 17 and 19%) on the physical and antioxidant property of product. Iron fortification in developing of extruded Thai rice snack

To produce an acceptable snack of high nutritional quality for the programs against anemia and malnutrition, the direct expansion snack products were developed from extrusion process using Thai brown rice of two specialty hybridization (variety: 313 and 1000) as basic raw materials. KKN01041-23-2-1-1 is a non-glutinous and non-photoperiod sensitive promising line derived from a three-way cross. The cross was made in 2004 at Khon Kaen Rice Research Centre, using PTT1 as a female parent and the line derived from the cross between Hawm Supanburi and Jao Hawm Nin as a male parent. The selected line; KKN01041-23-2-1-1, was evaluated in the inter-station yield trials for irrigated rice lines in north eastern Thailand during 2006-2011, and it gave an average yield of 620 kg./rai. This line was also evaluated in farmers' field trials in north eastern Thailand during 2008-2012 in both wet and dry season.
