Opportunities and challenges for multicriteria assessment of food system sustainability Ecology and Society

The focus of the Special Feature on “Multicriteria assessment of food system sustainability” is on the complex challenges of making and communicating overall assessments of food systems sustainability based on multiple and varied criteria. Four papers concern the choice and development of appropriate tools for making multicriteria sustainability assessments that handle built-in methodological conflicts and trade-offs between different assessment objectives. They underscore the value of linking diverse methods and tools, or nesting and stepping their deployment, to help build resilience and sustainability. School food provision in Germany. A first analysis of the role of organic produce Organic Eprints

School meal provision in Germany is changing from a type of supplementary food provision towards full warm school meals. Reasons for this transition are longer school days, the expansion of the all-day school model, and an increasing interest in a healthy nutrition for children and young people. However, the organisation of school meal systems is patchy and confusing; there is an enormous range of services in various qualities. This paper describes the current situation and explores chances for sustainable school meal systems emerging out of this change. The focus is on the use of organic food in school meals.

The demand for organic food products is steadily increasing partly due to the expected health benefits of organic food consumption. Polyphenols, such as flavonoids and phenolic acids, are a group of secondary plant metabolites with presumably beneficial health effects, and contents in plants are affected by, for example, plant nutrient availability, climate, pathogen infection, and pest attack. Local food and municipal food services: case Kiuruvesi, Finland Organic Eprints

In Finland, the Kiuruvesi municipality is the pioneer in use of local and organic food (LOF) in the statutory municipal catering services. The LOF strategy is based on territorial approach, and it was adopted as one means of enhancing the attractiveness of the remotely located municipality with unfavorable population development. The local policymakers have been fully committed to the strategy, and this has enabled the consistent development during nearly two decades. Comparison of Polyacetylene Content in Organically and Conventionally Grown Carrots Using a Fast Ultrasonic Liquid Extraction Method Organic Eprints

A rapid and sensitive analytical method for quantification of polyacetylenes in carrot roots was developed. The traditional extraction method (stirring) was compared to a new ultrasonic liquid processor (ULP)-based methodology using high-performance liquid chromatography−ultraviolet (HPLC−UV) and mass spectrometry (MS) for identification and quantification of three polyacetylenes. ULP was superior because a significant reduction in extraction time and improved extraction efficiencies were obtained. After optimization, the ULP method showed good selectivity, precision [relative standard deviations (RSDs) of 2.3−3.6%], and recovery (93% of falcarindiol) of the polyacetylenes. A Path of Actions to Develop Organics in the Finnish Food Chain Organic Eprints

The Finnish Government has set development goals for organic food chain. Following the actions presented in this paper, it is possible to develop the organics in the Finnish food chain holistically and comprehensively to reach the goals. The increase in production and consumption will have proven positive impact to the wellbeing of people, nature and animals. Arctic and safety features of Finnish food will enhance the export possibilities of organic food to partly correct the current negative trade balance. The development is possible when organic values are incorporated to the Finnish food chain supported by the Nordic welfare model.

Odborná monografie se zabývá problematikou posklizňové úpravy, skladování a zpracování rostlinných produktů v ekologickém zemědělství. Nejprve popisuje požadavky a postup při posklizňové úpravě produktů a to především u zrnin a okopanin. V další části se potom věnuje podmínkám a zásadám pro jejich skladování. Pozornost je věnována zásadám, které je nutné dodržovat při zpracování bioproduktů a při jejich přepravě. Monografie zahrnuje zásady i příklady omezení, které platí při produkci biopotravin na bázi rostlinných surovin obecně či při zpracování přímo na farmě.

Impact of production method and production area on energy balance of rye consumed in Helsinki Organic Eprints
Sinkkonen, Marko.
The results of the study show that production of fertilizers is the biggest factor in the rye production chain. Therefore organic rye tillage is not as intensive in energy usage as conventional practices. The energy consumed for transportation does not play a big role in total energy consumption of rye consumed in Helsinki.

Transitions to Agroecological Systems: Farmers’ Viewpoints Organic Eprints
