Effect of blanching on physicochemical characteristics of potato flour 75

ABSTRACT Offering new products obtained from potatoes is a market opportunity which may increase and motivate the consumption of this tuber. It also can contribute for waste reduction and ensure market for growers. Thus, we aimed to produce potato flour and to evaluate the effect of blanching on the physiochemical characteristics of this product after 3-month storage at room temperature. Potatoes cultivar Agata were used to make unblanched and blanched flour, through thermal treatment at 97°C for 5 min. The unblanched potato flour presented significantly smaller contents of moisture (p= 0.006), proteins (p= 0.001) and soluble fibers (p= 0.024), as well as color alteration. A incorporação de leguminosas no estadio de floração visa principalmente o aumento de matéria orgânica e nitrogênio. Essa prática beneficia as propriedades físicas, químicas e biológicas do solo, propiciando na maioria dos casos aumento de produtividade da cultura, a seguir implantada. No Estado do Acre a cultura da mandioca apresenta expressiva importância econômica e social, constituindo-se um dos produtos básicos da alimentação da população. A maior demanda por mandioca, no Estado, é para a fabricação de farinha, mas existe também um grande potencial para o seu consumo in natura. O objetivo deste trabalho foi avaliar genótipos de mandioca para consumo in natura em diferentes épocas de colheita no Estado do Acre. Verificou-se que o genótipo Pão apresentou alta produtividade de raízes, resistência à podridão radicular, baixo teor de ácido cianídrico na polpa de raízes frescas sendo, portanto, indicado para consumo in natura. The archipelago of Kerguelen with its complex fjord distribution is particularly interesting for the study of anoxic systems. Between 1968 and 1972, several stations were investigated fortnightly. One of these was further sampled weekly throughout 1982. Each sample series of sediment included the superficial aerobic and subsuperficial anaerobic levels. Each level was examined for direct epifluorescent counts, heterotrophic and sulfate-reducing bacterial numbers by M.P.N. methods, organic carbon and sulfide measurements. One characteristic of the Seine Estuary system is the process of sediment resuspension by the specific hydrodynamics of this environment. It's the main factor of trace metals transport. Autotrophic activities also have an effect on the estuary, by pH variation. The behavior of soluble and organic copper, iron, have been studied in relation to salinity in and out of the estuary. The results are compared with those of other estuaries.

Four seasonal compaigns providing a sampling of 15 stations each followed during half a tide cycle, i.e. 120 water samples permit the definition of the main hydrobiological features of Marennes-Oleron Bay: salinity and turbidity, phytoplanktonic biomasses, ATP concentrations. The authors suggest that a new way of adapted sampling to their objectives, will work out in the future by sampling during tidal cycles but as frequently as possible.

Review of grow-out techniques under tropical conditions: Experience of Thailand on seabass (Lates calcarifer ) and grouper (Epinephelus malabaricus) 5

Seabass and grouper have been reared in cages in coastal waters in Thailand for 10 years. The fingerlings are nursed for a month in nylon nursing cages. Then, the juvenile fish are reared in culture cages which can be stationary or floating. The cage is usually 5 x 5 x 2 metres. The stocking density is around 500 to 2000 fish per cage. The survival rate is approximately 80%. The selling price at the culture site is 80 baht and 250 baht per kg for sea bass and grouper respectively. The culture method and economics of culture are explained.

Information available on the association of luminous bacteria with marine invertebrates is limited. Hence qualitative and quantitative investigations were undertaken with a view to understand the distribution of luminous microflora in relation to the environmental factors and also in the gut of two marine gastropods, Aplysia benedicti Eliot and Bullia tranquebarica (Roding) from Porto Novo (11 degree 29'N, 79 degree 46'E) waters of the East coast of India. Potato tubers(cv.,Inka-no-mezame,Inka Red,Kitamurasaki,Danshaku and Kitahime)were stored at 4℃ for about 8 months and changes in physicochemical properties of starches isolated from potatoes were examined periodically during storage. Both average granule size and phosphorus content of starches were decreased during low temperature storage. However, the blue values of starches from five cultivars were increased with the increasing duration of storage period. These changes may suggest that amylopectin of the outer surface of starch granules is gradually converted to sugars during cold storage. Marea roja ocasionada por <i>Scripsiella trochoidea</i> en el estuario del río Chone 20

Se presentan los resultados obtenidos durante un evento de marea roja en el estuario del río Chone y que las variables físicas, químicas, planctónicas y de contenido estomacal. Se considera que la marea roja registrada fue originada por <i>Scripsiella trochoidea</i> y no habría tenido características tóxicas y que la mortalidad de chuhueco <i>Cetengraulis mysticetus</i>, habría sido resultado de los descensos del oxígeno que habría provocado esta proliferación algal.

Caractérisation physico-chimique de la partie sud ouest de la baie de Tunis sous l’influence des apports de l’oued Meliane 20

La partie sud ouest de la baie de Tunis subit les apports de l’oued Méliane qui est le deuxième oued pérenne de la Tunisie. Afin de cerner le profil physicochimique de cette partie de la baie, des prélèvements mensuels ont été effectués au niveau de 22 stations dont 19 dans la partie Sud Ouest de la baie de Tunis et 3 en aval de l’oued Méliane pendant les deux saisons, estivale et automnale de l’année 2004. Les valeurs de la température étaient conformes aux normes saisonnières et la salinité était faible à l'embouchure de l'oued Méliane suite aux apports d'eau douce. Les teneurs en sels nutritifs (nitrates, phosphates et ammonium) étaient très élevées et ont classé la qualité des eaux de la partie sud ouest de la baie de Tunis dans la catégorie "médiocre"...

Variations in some physico-chemical parameters of water [Transparency, temperature, pH, DO, salinity, conductivity, PO4, NH4 SiO2 and alkalinity] observed at 10 stations located in the main channel of the river are presented. Results showed that salinity, conductivity, pH, DO, and alkalinity exhibited spatial and temporal variations. The physico-chemical features and phytoplankton community of the upper reaches of the New Calabar river at Aluu were studied at high and low water slacks for a period of 12 months. The water was acidic (pH 5.5 – 6.5) with low alkalinity (10 – 20mg CaCO3 L-1 and characteristically soft (total hardness ranging from 10 to 60mg CaCO3L-1). There was obvious seasonal flux in the silica level, with dry season having higher values than wet season.
