Hauptziel des Sortenteams, das aus Vertretern von Coop, Abpackbetrieben, Produzenten und des FiBL besteht, ist die möglichst effiziente Optimierung des Sortenangebotes von biologischen Früchten nach sensorischen, agronomischen und ökologischen Kriterien. Das Sortenteam wählt aus bereits vorgeprüften Sorten solche aus, die bestehende Sortimentslücken schliessen oder bisherige Sorten verbessern könnten. Diese "Team-Sorte" wird auf 2-4 Bio-Betrieben im Vertragsanbau produziert. Die Gesamtfläche ist so gross, dass mit den Erträgen des dritten und vierten Standjahres Testverkäufe durchgeführt werden können. Die meistgenannten Erwartungen von Konsumentinnen und Konsumenten an die Qualität von Bioprodukten lassen sich wie folgt zusammenfassen: keine Pestizidrückstände, besserer Geschmack, besser für Gesundheit und Umwelt. Ein Überblick über die verfügbare Fachliteratur zeigt, dass Bioprodukte diese Erwartungen meist erfüllen. Die Frage, wie sich die gefundenen Unterschiede auf die menschliche Gesundheit auswirken, ist jedoch experimentell noch wenig erforscht. |

Due to higher prices in the organic compared to the certified integrated apple production, fruit growers are more and more interested in the conversion from integrated to organic production. With the return-risk profile based on Mouron (2001a) it is possible to identify the return and risks with economic indicators from the full cost account and the cash flow statement. Therefore, the return-risk profile serves as a basis for decision- making for producers concerning an evaluation to convert to organic. The present study was performed to evaluate the polyphenol content and antioxidant capacity of apples (cv. `Golden Delicious') grown under defined organic and conventional conditions. Apples were harvested at five comparable commercial farms over the course of three years (2004−2006). In 2005 and 2006 the antioxidant capacity was 15% higher (p < 0.05) in organically produced apples than in conventionally produced fruits. In 2005 significantly higher polyphenol concentrations were found in the organically grown apples. A tool to ease the market introduction of scab resistant apple varieties in supermarkets, is the socalled «Flavour Group Concept (FGC; Weibel and Grab, 2000) that has been developed by FiBL and «Coop» (second biggest supermarket retailer of Switzerland) already in 1995. The FGC is providing to the buyers additional information on the specific flavour direction of that "unknown" apple cultivar in front of them (mild to sweet; spicy-tart; predominantly tart). Einleitung 1997 trat die Blutlaus (Eriosoma /anigerum) in der Schweiz in verschiedenen Bioobstanlagen stark auf. Die Gründe dafür liegen wahrscheinlich in der ungenügenden Parasitisierung der Blutläuse durch die Blutlauszehrwespe. Zwei kalte Winter (1995/96 und 1996/97) aber auch die kühle und nasse Witterung im Mai und Juni 1997 haben die Entwicklung der Zehrwespenpopulationen stark eingeschränkt. Die Schaden waren vielfach enorm und führten nebst Fruchtverschmutzungen zu irreversiblen Trieb- und Knospenschaden, gefolgt von Ernteausfall im Folgejahr, bis zum Absterben ganzer Baume. In einer zweijährigen Studie untersuchten wir biologisch und integriert (IP) produzierte Tomaten aus Praxisbetrieben in Erdkultur, um herauszufinden, ob die Anbaumethoden zu konsistente Unterschiede in qualitätsrelevanten Parametern führen könnten. Dazu erhoben wir die Anbauweise und untersuchten Früchte von je fünf vergleichbaren Bio- und IP- Betrieben aus vier wichtigen Anbauregionen der Schweiz im Jahr 2000 und 2001. Die Apfelsortenprüfung ist seit Jahren fester Bestandteil im Programm der FiBL-Obstbauforschung. Die Prüfung erfolgt sowohl in einem Exaktversuch in Frick wie auf Praxisbetrieben. Die Versuchsanlage in Frick ist so angelegt, dass die Sorten unter praxisüblichen, wie unter Extrembedingungen geprüft werden können (ohne Läusebekämpfung, ohne Ausdünnung und bei älteren Bäumen auch ohne Mehltau- und Regenfleckenbekämpfung). Dies erlaubt - für den Bioanbau besonders wichtige - Aussagen über die Läuseanfälligkeit, den Grad der Selbstausdünnung und nur im Bio-Anbau problematische Krankheiten zu machen. Zu jeder Krankheit, jedem Schädling hat es ein Bild sowie die Unterkapitel Wie erkennen?, Wichtig zu wissen, Wie vorbeugen?, Wie direkt bekämpfen? Ein übersichtlicher Terminplan zeigt, wann bei welchem Schädling welche Massnahme vorzusehen ist. Im Kapitel Applikationstechnik wird die korrekte Anwendung der Pflanzenschutzmittel vermittelt. With economic indicators from the full cost account and the cash flow statement it is possible to identify the return-risk profile for the organic and the integrated apple production in Switzerland. The full cost account and the cash-flow time line are composed with the managerial-economical software-tool Arbokost. Due to higher (more than 100%) prices in the organic production, growing organic satisfies more return-oriented producers than growing certified integrated. However, the higher return in the organic production is bound to a higher risk. The effects of organic and integrated production systems on the culturable fungal microflora of stored apple fruits from five matched pairs of certified organic and integrated ‘Golden Delicious’ farms were studied at five representative production sites in Switzerland. Isolated fungi were identified morphologically. Colonization frequency (percentage of apples colonized), abundance (colony numbers), and diversity (taxon richness) were assessed for each orchard. The standard quality of the stored fruits was comparable for both organic and integrated apples and complied with national food hygiene standards.
