Abstract: The objective of this work was to evaluate the influence of harvest at maturity on the composition, quality, and postharvest life of zapallito squash (Cucurbita maxima var. zapallito). Fruit were harvested at three developmental stages - small, medium, and large, with 30, 70, and 90±10-mm diameter, respectively - and were stored at 0 and 5°C for 26 days and, then, at 20°C for 2 days. The following parameters were determined: respiration, firmness, color, chlorophyll content, carotenoids, sugars, acidity, phenolic compounds, antioxidants, decay, mass loss, and chilling injury (CI). Small light-colored squashes were more prone to dehydration and decay. Delaying harvest markedly reduced fruit carotenoid contents, acidity, and respiration rate;... |

ABSTRACT The use of mechanization in the harvesting of industrial tomatoes provides greater yield and speed of this stage. However, mechanical intervention in this process may alter the physiology of harvested fruits. Therefore, the objective of this study was to measure the quantitative losses of tomato fruits and to verify the physico-chemical behavior of fruits harvested based on physicochemical analysis in harvesters with different hours of use. Three self-propelled harvesters of the same brand and model with different working hours were used. Manually selected or undamaged fruits were harvested; afterwards, mechanized harvesting was carried out. Firmness, titratable acidity, soluble solids content (°Brix), pH, weight loss and fruit status... |

Abstract One of the great challenges of the mango production chain is the maintenance of post-harvest quality of this fruit for export with a focus on food safety. This study evaluated the effect of the hydrothermal treatment associated to ethanol on mango’s quality. Two tests were performed, in both were used ‘Tommy Atkins’ mangoes. In the first one, the heat treatment consisted of immersing the fruits in a bath at 46.1 °C / 75 minutes with ethanol concentrations of 0, 5, 10 and 20% v / v, then a cooling bath at 21.1 °C / 30 minutes and stored at 25 °C. In the second, fruits were submitted to the baths, but with ethanol concentrations of 0, 3, 5 and 7% v/v, and stored at 25°C and 10°C. Physical-chemical and phytopathological analysis and percentage of... |
