The cupped oyster, Crassostrea gigas was first introduced in France in 1967 [13]. On the Atlantic coast, the Marennes Oléron Bay (Figure 1) is the first European oyster culture basin with a cupped oyster (Crassostrea gigas) stock of 110,000 tons and an annual output of 30,000 to 40,000 tons. The Ronce oyster bank, located at the south of the bay (Figure 1), is made of 1,600 concessions spread out over 175 ha. It produces 8,000 to 10,000 tons of cupped oysters each year. In Marennes-Oléron, Héral (1986) described the relationship between the annual production and the oysters' biomass over a century. His conclusion is that the drop in the growth of oysters was caused by an "overstorage" considering the trophic capacity of the basin. Moreover, the large intertidal spaces, though providing a great opportunity for mollusc culture, suffer from a large bio-deposition (Sornin 1983) which tends to intensify the sedimentation of the basin. Monitoring hydrology is an essential part of studying an ecosystem such as the Marennes-Oléron Bay. Since 1977, bimonthly samples have been taken from five stations in the bay. These samples provide important information on physical characteristics (temperature, oxygen, salinity), nutrients (NH4, NO3, NO2, SiO3, PO4) and particulate matter composition (seston, chlorophyll a and pheophytin). |

Food web modelling is an ideal way to describe ecosystems, because it accounts for the totality of the relationships between its various components. One difficulty of such an approach, however, lies in the lack of data and information about some ecological relationships, resulting in under-defined systems. The Aquaculture Resources Department's mollusc network (REMORA) federates six coastal Ifremer laboratories. Since 1993, REMORA has implemented a unique national protocol to account for the variability in the growth of Pacific oysters farmed in 39 sites within the main production areas, from Normandy to the Mediterranean Sea. In 1995, the goal of the network was expanded to include monitoring of a second age class. To do so, the protocol developed for adults was adapted to monitor juveniles. The data, organised in Excel worksheets with a specific application written in Visual Basic, allows for inter-station and inter-annual comparisons and thereby constitutes a database of interest to oyster farmers, scientists and administrative personnel. |

La connaissance des stocks en élevage est un élément important de gestion de la ressource. L'appréciation de l'adéquation entre la disponibilité trophique du milieu et la biomasse d'animaux filtreurs rend ces évaluations indispensables. Dans le cadre de la gestion des écosystèmes conchylicoles côtiers, le stock en place est un élément clé, ainsi que sa variabilité spatiale; les performances de croissance et de mortalité (rendements biologiques), sont également des données nécessaires à une gestion rationnelle. Depuis 2014, des épisodes de mortalité anormale affectent les cheptels mytilicoles tant adultes que juvéniles. Dès l’année 2015, une étude spécifique cofinancée par la DPMA et réalisée par l’Ifremer a été initiée, l’action de recherche MORBLEU (Mortalité des moules Bleues). Since 1988, seasonal, chronic mortality (up to 30-40 %) has been occurring at oyster farms in the Marennes-Oléron Bay, namely at the Ronce and Perquis sand flats. The particular geographic position on the southern part of the bay, between the Seudre River and the Maumusson Strait, confers a relative specificity to these oyster farming areas. Production in this area is on the order of 8,000 to 10,000 t of the 30,000 t of oysters produced annually in the Bay. Although limited in surface area (180 ha out of a total of 4,500 ha), this high proportion of production can be attributed to the fact that this zone is mostly dedicated to the finishing process before commercialisation. Traditionnellement pratiqué dans les marais maritimes autour du bassin de Marennes Oléron, l'affinage des huîtres en claires est destiné à améliorer leur qualité tant d'un point de vue organoleptique et engraissement que du durcissement des animaux. Le but recherché est d'obtenir un gain de poids de chair, une augmentation des réserves glucidiques, une saveur particulière, et un renforcement de la coquille.
