Livestock Husbandry between Ethics and Economics: Finding a Feasible Way Out by Target Costing? AgEcon
Theuvsen, Ludwig; Essmann, Sandra; Brand-Sassen, Henning.
Livestock husbandry is a major line of conflict in many industrialized countries. Farmers are caught in a dilemma between ethical considerations imposed by, for instance, nongovernmental organizations and the wider public on the one hand and competitive and economic pressures on the other. In this paper we use a target-costing approach to determine whether it is possible to implement more animal-friendly husbandry conditions for turkey fattening in Germany without sacrificing competitiveness. Empirical results show that, at first glance, the willingness on the part of consumers to pay for more animal welfare exceeds the costs to farmers of more animal-friendly husbandry systems. A critical discussion reveals that this result may be flawed by methodological...

Public Attitudes to the Welfare of Broiler Chickens AgEcon
Hall, Clare; Sandilands, Victoria.
This paper reports results from two workshops held in York, England that investigated public attitudes towards the welfare of broiler chickens. At the outset the majority of participants admitted that they knew little about how broiler chickens are reared and were shocked at some of the facts presented to them. Cognitive mapping and aspects of Q methodology were used to reveal the range of variables that participants believed affected chicken welfare, the causal relationships between those variables, and what variables were considered most and least important. While some participants focused on the importance of meeting basic needs such as access to food, water, light and ventilation, others highlighted the role of welfare regulations and public opinion....

Prospects for a European Animal Welfare Label from the German Perspective: Supply Chain Barriers AgEcon
Franz, Annabell; von Meyer, Marie; Spiller, Achim.
The Federal Government of Germany as well as the European Commission are discussing the establishment of an animal welfare label. This label should enable consumers to make a conscious purchasing decision on animal welfare products. Various studies show that many consumers (in Germany around 20 %) prefer products produced under animal friendly conditions. However, the supply of such products is limited. The following study examines the source of this discrepancy by way of an action‐based analytical approach and identifies different barriers within the supply chain that prevent the establishment of a market segment for animal welfare products. Although consumer demand will be decisive for long‐term success, first of all the stakeholders of the supply chain...

A Structural Equation Model of the Factors Influencing British Consumers’ Behaviour towards Animal Welfare AgEcon
Toma, Luiza; McVittie, Alistair; Hubbard, Carmen; Stott, Alistair W..
Results of national and pan-European consumer surveys and the growth in the demand for so-called “animal friendly” food products suggest that consumers within the European Union show a high level of concern for the welfare of farm animals. This paper analyses the determinants of British consumers’ behaviour towards animal welfare using structural equation models (SEM) with observed and latent variables. SEM is a statistical technique for testing and estimating relationships amongst variables, using a combination of statistical data and qualitative causal assumptions. We used a data set collected in 2005 through face-to-face interviews of 654 consumers in England. We analysed the range of statements in existing literature on consumers’ behaviour towards...

Regulatory Framework and Private Innovation: The Case of Animal Welfare Friendly Beef Supply Chain in Italy AgEcon
Arfini, Filippo; Mancini, Maria Cecilia.
The paper examines innovation in the agrifood sector through an analysis of relationships between public institutions and the private sector. The first part is theoretical and analyses the roles played by public and private actors in innovation. The second part is a case study of the beef supply chain of COOP, the biggest retailer on the Italian market. It exemplifies product innovation driven by a regulatory framework and shows how organisation and structural renewal required by animal welfare legislation can lead to voluntary initiatives and additional innovation along the supply chain. The case study also features the role of institutions in communications and shows how market awareness drives improvement in organisation of production chains.

Trade-offs between conflicting animal welfare concerns and cow replacement strategy in out-wintering Scottish suckler herds AgEcon
Vosough Ahmadi, Bouda; Morgan, Colin A.; Stott, Alistair W..
Since decoupling of the CAP, many Scottish suckler cow farms are facing financial difficulties. In response, many farmers are out-wintering extensively managed suckler cows to minimise production costs. These systems are of animal welfare concern. A range of trade-offs between animal welfare indicators and between animal welfare and farm profitability can be identified. A Dynamic Programming (DP) model was developed to study these trade-offs. Two herds were modelled assuming their feeding regimes were either low (LHERD) or high (HHERD). The objective of the DP was to maximise the expected net margin from a current cow and its successors over an infinite time horizon. Preliminary results showed that the rate of voluntary culling was higher in HHERD than in...

A hízott liba- és kacsamáj termelése, valamint piaci kihívásai AgEcon
Kozak, Janos.
A világ májtermelésének növekedése azt jelzi, hogy e különleges termék fogyasztása iránti igény várhatóan hosszabb távon fennmarad. A termelés szerkezetében azonban átrendeződés várható az olcsóbb hízott kacsamáj javára. Ugyanakkor a libamáj a hízottmáj-termékcsoportban csúcsminőség marad. Magyarország, mivel Franciaország után a legnagyobb májtermelő ország, továbbra is mindkét termék előállításában érdekelt lesz. Hazánk már évtizedek óta a világ vezető libamájtermelő országa, de a jövőben új piaci versenytársak (pl. Kína) megjelenésére is számíthat a világ májkereskedelmében. Emellett más országok növekvő kacsamájtermelése is egyre nehezebbé teszi a magyarországi májtermékek külpiaci értékesítését. Mivel a jelenlegi gyakorlattól eltérő módon hízott májat...

Lighting in the shackling area: conciliating broiler welfare with labor comfort Rev. Bras. Ciênc. Avic.
Adamczuk,GO; Trentin,MG; Lima,JD de; Motta,J; Cantelli,RP.
The objective of this study was to investigate if blue lighting could reduce broiler stress and comply with legal labor comfort requirements in a new shackling area of a middle-size processing plant. In this study, the old shackling area was compared with the new area, where a blue lighting system was designed and implemented according to the regulations. The old and new areas were video- and audio-recorded during the shackling of 33,850 broilers in each area. Data were statistically analyzed using the non-parametric test of Wilcoxon-Mann-Whitney (w test). The results indicated 56% reduction in wing-flapping and 3.2% noise reduction in the new area. These results were obtained by increasing 119% lighting at the work stations in the shackling area, allowing...

Effects of Laser Beak Trimming on the Development of Brown Layer Pullets Rev. Bras. Ciênc. Avic.
Petrolli,TG; Petrolli,OJ; Girardini,LK; Zotti,MLAN; Baggio,RA; Junqueira,OM.
ABSTRACT Laser beak trimming is a promising alternative to conventional hot-blade beak trimming as it is less painful and provides better beak uniformity and better animal welfare. In this study, laser vs. hot-blade beak trimming were compared in 400 Hy-line Brown pullets between 2-16 weeks of age. At 7 days of age, birds were distributed according to a completely randomized design into two treatments, with 10 replicates (pens) of 20 birds each. Birds and feed offer and residues were weekly weighed to determine weight gain, feed intake, and feed conversion ratio. In weeks 4, 8, 12, and 16 weeks, one bird per experimental unit was sacrificed to measure the development of the heart development, liver, proventriculus, gizzard, small intestine, and bursa. And...

Photogrammetry: a Non-Invasive and Objective Method for Detecting Locomotion Problems in Broiler Chickens Rev. Bras. Ciênc. Avic.
Mendes,AS; Paixão,SJ; Sikorski,RR; Bonamigo,DV; Morello,MG; Ponzoni,RAR.
ABSTRACT Locomotion problems in broiler chickens can cause economic losses of up to 40% of the total revenues due to carcass condemnation and downgrading at processing. Leg disorders, such as femoral lesions, tibial dyschondroplasia, and spondylolisthesis, substantially impact the welfare of chickens as these disorders can prevent birds from reaching the feeders and drinkers, thus reducing feed and water intake. The most important issues related to broiler welfare reported in the last two decades are their growing sensitivity to metabolic and locomotion problems due to the fast growth rates and inactivity. Traditional methods for the determination of gait score include the manual scoring of animal behavior in the broiler house. Recorded video images can...

EXPOSURE TO CARBONIC GAS ENRICHED ATMOSPHERE OR ELECTRICAL WATER BATH TO STUN OR KILL CHICKENS Rev. Bras. Ciênc. Avic.
Nicolau,JP; Pinto,MF; Ponsano,EHG; Perri,SHV; Garcia Neto,M.
ABSTRACTThe objective of this study was to compare the effects of two methods (electrical water bath or carbonic gas atmosphere) for stunning or killing broiler chickens prior to bleeding on weight loss due to bleeding and meat traits. A completely randomized design with 2 x 2 factorial arrangement (electrical or gas system x stunning or killing) was applied. The time required for stunning and killing and the birds' behavior were evaluated for the gas exposure method. The birds killed by the electrical method retained more blood than those killed by the exposure to gas and, therefore, presented redder meat. The exposure to 10 to 15% CO2 atmosphere caused discomfort reactions in 100% of birds, and the intensity of reaction presented a wide variation: 35%...

Environmental and physiological variables during the catching of broilers Rev. Bras. Ciênc. Avic.
Queiroz,ML de V; Barbosa Filho,JAD; Duarte,LM; Brasil,D de F; Gadelha,CRF.
The objective of this study was to determine the critical points of the operation of broiler catching for transport to the processing plant from animal and operational perspectives. During catching, chickens, environmental variables (temperature and relative humidity) were constantly monitored to determine the Enthalpy Comfort Index (IEC). Also, the physiological variable rectal temperature (RT) was monitored as an indicator of stress suffered by the birds during this handling procedure. Bird welfare were evaluated by analyzing their behavior. The bag method was effective to prevent the struggling of birds while being taken from the broiler house to the transport truck, reducing physical injuries and losses during catching.

Field evaluation of broiler gait score using different sampling methods Rev. Bras. Ciênc. Avic.
Cordeiro,AFS; Nääs,IA; Salgado,DD.
Brazil is today the world's largest broiler meat exporter; however, in order to keep this position, it must comply with welfare regulations while maintaining low production costs. Locomotion problems restrain bird movements, limiting their access to drinking and feeding equipment, and therefore their survival and productivity. The objective of this study was to evaluate locomotion deficiency in broiler chickens reared under stressful temperature conditions using three different sampling methods of birds from three different ages. The experiment consisted in determining the gait score of 28, 35, 42 and 49-day-old broilers using three different known gait scoring methods: M1, birds were randomly selected, enclosed in a circle, and then stimulated to walk out...

Efficiency of Electrical Stunning by Electronarcosis: Current Situation and Perspective of Improvement in a Medium-Size Processing Plant Rev. Bras. Ciênc. Avic.
Barbosa,RL; Adamczuk,GO; Dvojatzki,P; Trentin,MG; Lima,JD.
ABSTRACT The objective of this study was to evaluate the efficiency of electrical stunning by electronarcosis in a medium-size poultry processing plant located in southern Brazil. The current measurement of this type of stunning is presented, and then improvements to this method are proposed. Data were collected for 90 days. A quality indicator was proposed: the Stunning Severity Index (SSI), which includes elements of Statistical Process Control (SPC) using a p-chart (proportion chart) and measures. This index comprises the variables "wing-flapping," "arched head," and "rhythmic breathing." Using the proposed index, 5% of the birds, on average, presented inefficient stunning symptoms.

Genetic and Environmental Effects on Tonic Immobility Duration of Red-Winged Tinamou Applying Survival Analysis Rev. Bras. Ciênc. Avic.
Hata,ME; Caetano,SL; Boleli,IC; Queiroz,SA.
ABSTRACT Fear behavioral studies provide knowledge on animal welfare, and fearful behaviors can be used as selection criteria of individuals adapted to intensive rearing system. The survival analysis methodology was applied to estimate tonic immobility (TI) duration, as an indicator of fear, of red-winged tinamous (Rhynchotus rufescens) reared in captivity and to determine if TI is genetically influenced. A number of 539 birds born between 2006 and 2010 were evaluated. The exploratory data analysis was performed using the Kaplan-Meier estimate (KM), and the covariates were then fit to a Cox model, considering month of observation nested within year of birth and body weight as fixed effects and the random effect of sire as frailty term. In order to predict...
