Il y a un siècle, le savant naturaliste COSTE concevait les principes d'une technique ostréicole complète et/en faisant la démonstration pratique. Né en 1807 à Castries (Hérault), mort en 1873, Jean Coste entra à l'Académie des Sciences en 1851. Il fut également membre de l'Académie de Médicine et professeur au Muséum puis au Collège de France; il fonda le laboratoire de zoologie et physiologie maritimes de Concarneau et en fut le premier directeur. En 1892, il se vit confier la charge d'inspecteur général de la pêche fluviale et de la pêche côtière maritime. This study (“Risco”), implicating both industry, socio-economic experts and biologists, was funded by the Regional Council of Brittany, for 3 years (2010-2012), to investigate about the causes of oysters (Crassostrea gigas) mortalities in the bay of Quiberon (South Brittany, France). The protocol including both a sonar and video visualization of the bottom, and a monthly survey of 15 experimental oyster structures, allowed to assess the risk due to predation. A clear spatial distribution of the predatory effect was evidenced, with starfish (Asterias rubens and Marthasterias glacialis) predominating in the North-East sector, and boring snails (Ocenebra erinacea and Pterophora inornata) in the South-Center area.. Monitoring of reproduction in the oyster Crassostrea gigas, and more particularly in the mussel Mytilis edulis were conducted, in the Marennes-Oléron Bay each year, from June to September. The phenomenon of summer mortalities of the Pacific cupped oyster Crassostrea gigas is observed in France since the beginning of the 90's. These mortalities are classically associated to younger stages and summer temperatures and occur during the reproduction period of the animal. The studies undertaken during the project Morest (2001-2005), showed that a number of biological and environmental risks, the interaction of them induces lethal stresses for animals in physiological weakness, exists in summer. Among these risks, that which is withstood by the oysters bred close to the sediment proved to be significant in intertidal areas.
