The first national census concerning shellfish culture in France was carried out in 2002. The main purpose was to provide accurate and comprehensive information on the number and structure of the companies using an in depth review of production factors (leases, plants, equipment's, labour and qualifications), and a survey of cultural practices up to the market level. Moreover, the census aimed to quantify the bivalve sales dedicated to consumption and to measure the livestock transfers among rearing shellfish production areas at different developmental stages: spat, intermediate products and fully grown marketable products. This paper summarizes knowledge about relations between husbandry practices and oyster spat mortalities since 2008 in France. These relations are strictly analyzed from a panel of experiments set on the shore (in outdoor experiments) by Ifremer teams and technical institutes all over French coasts. Results show some practices are able to reduce spat mortality with some influencing factors relevant of spat quality (sanitary status, natural or genetic selection) or husbandry practices. Spat “free” of virus is able to survive up to 90% when it is isolated and confined in ponds or nursery, during an epidemic crisis. The lack of good quality planting material has limited the expansion and contributed to yield reduction of the Brazilian pineapple culture. Alternatives of 'Pérola' pineapple slips management were studied aiming at obtaining superior planting material within a shorter time period and making good use of healthy slips of low vigor, that are commonly discarded by growers.
