Die Zunahme ernährungsbedingter Krankheiten in Industrieländern lenkt die Aufmerksamkeit von Verbrauchern, Ernährungsindustrie und Lebensmitteleinzelhandel (LEH) zunehmend auf Lebensmittel mit Zusatznutzen für die Gesundheit. Empfehlungen der Weltgesundheitsorganisation (WHO) zur Vorbeugung ernährungsbedingter Krankheiten zielen auf einen verminderten Konsum fettreicher Fleischarten wie Schweinefleisch und Fleisch von Lamm und Ziege bei gleichzeitigem Anstieg des Verzehrs von Rindfleisch ab. Conventionally, fruits and vegetables have been the major source of micronutrients. However, with the rising availability of nutritional supplements, U.S. consumers no longer need to rely on food alone for their nutritional needs. Time-pressured consumers with limited cooking skills and nutrition knowledge may find it easier to take vitamin supplements. The objective of this paper is to determine the impact of lifestyle, diet behavior including vitamin supplement consumption, and food culture on diet quality outcomes as measured by the Healthy Eating Index-2005 (HEI) and total energy intake. Health risks associated with seafood products prompted the introduction of mandatory HACCP in the seafood industry in the United States in 1997. This paper quantifies the trade impact of this introduction by analyzing patterns of seafood imports to the U.S. over the period 1990 to 2004. The results of a gravity model using panel data suggest that HACCP had a negative and significant impact on overall seafood imports from the top 33 developing and developed countries selling into the U.S. For developing countries, the results support the view of "standards-as-barriers" versus "standards-as-catalysts" as the negative HACCP effect was experienced by developing countries, while the effect for developed countries was positive. |

In this paper we use a general model of imperfect competition to predict welfare changes within an open-access fishery transitioning to individual transferable quota (ITQ) management. Although related research has explored the effects of market power in the harvesting sector on ITQ performance, none have considered the implications of an imperfectly competitive processing sector. This study addresses this question specifically in the context of the Atlantic herring fishery, although its implications are relevant to all fisheries with similar industry structure. We apply a set of weekly Nielsen retail scanner data for the period 2006-2007 to estimate consumer demand of value-based ground meat products in the Canadian retail market. Our demand system results indicate that price responses are stronger for organic than for extra lean meat products. Additionally, while rising disposable incomes may shift consumers’ attention and purchases towards extra lean ground meat products, this result does not hold for organic ground beef. To lower the incidence of human food-borne disease, experts and stakeholders have urged the development of a science- and risk-based management system in which food-borne hazards are analyzed and prioritized. A literature review shows that most approaches to risk prioritization developed to date are based on measures of health outcomes and do not systematically account for other factors that may be important to decision making. The Multi-Factorial Risk Prioritization Framework developed here considers four factors that may be important to risk managers: public health, consumer risk perceptions and acceptance, market-level impacts, and social sensitivity.
