Labeling Genetically Modified Food Products: Attitudes among the consumers in the United States and United Kingdom AgEcon

Eight perceived attributes of agro-biotechnology were identified to be associated with consumers' attitude toward existing practices of GM food labeling. The perceived negative attributes, particularly health risk from GM food, played a dominant role in shaping the overall attitude toward GM labeling. Female and older respondents were more likely to be concerned about the existing GM labeling practices than male and younger respondents. Consumers with college education were less likely to be concerned about existing GM labeling practices than those without college degree.

Perceived Health Benefits and Soy Consumption Behavior: Two-Stage Decision Model Approach AgEcon

A two-stage decision model is developed to assess the effect of perceived soy health benefits on consumers' decisions with respect to soy food. The first stage captures whether or not to consume soy food, while the second stage reflects how often to consume. A conceptual/analytical framework is also employed, combining Lancaster's characteristics model and Fishbein's multi-attribute model. Results show that perceived soy health benefits significantly influence both decision stages. Further, consumers' negative perceptions regarding soy (unappetizing taste and inconvenience) have a substantially greater impact on soy consumption behavior than their perceptions about soy health benefits. Estimating the Effect of FDA Allowed Health Claims on the Consumption of Soy-based Foods AgEcon

The study evaluated the influence of the Food and Drug Administration (FDA)'s regulatory action regarding the health benefits of soy-based foods on soy consumption. The results indicated that frequent users of soyfood products who were exposed to the FDA’'s decision would be more inclined to increase their consumption of soy-based foods as compared to those who were not exposed to such information. Yet the information about FDA's decision did not influence the behavioral intentions of infrequent-or non-consumers. Our study uses contingent valuation survey data (WTA and WTP) collected in the UK to examine consumers' behavioral intention with regard to GM food. In particular, we characterize respondents who selected "Don't Know" and "Protest" options in WTP questions in terms of what they would do when offered discount for GM food.

Willingness-to-Accept and Willingness-to-Pay for GM and Non-GM Food: UK Consumers AgEcon

Our research elicited UK consumers¡¯ willingness-to-accept (WTA) discount in exchange for giving up non-GM food and willingness-to-pay (WTP) premium to purchase non-GM food. Eliciting only WTP does not provide sufficient information for determining substitutability between GM and non-GM food. Results indicate that there is a strong demand for non-GM food in the UK, but a non-negligible segment expressed their willingness to substitute non-GM food with GM version either without discount (12 %) or with discounts (34 %). This result suggests that there is an economic incentive for food industry in Europe to offer GM food to consumers.

APPLICATION OF BIOTECHNOLOGY IN AGRICULTURE AND MEDICINE: UNITED STATES VERSUS EUROPE AgEcon

Discrepancies in the attitude between US and UK consumers toward application of biotechnology in crop production and medicine were examined using data from mail and online surveys. Results showed that more than 31% (46%) of US (UK) respondents were opposed to biotech foods while only 16% (18%) opposed biotech medicine, respectively. Perceived risks and benefits of agro-biotechnology and medical biotechnology were significant in determining overall attitude toward application of biotechnology in agriculture and medicine i.e., perceived risks (benefits) caused consumers to oppose (support) application of biotechnology in food production and medicine.

Changes in Soy Based Food Consumption, 2001 and 2007 AgEcon

Two-stage regression models were used to estimate the effects of the perceived attributes of soy food and socio-economic variables on participation decision and consumption frequency decision for soy products. While households consuming soy products increased from 2001 to 2007 by nearly two percentage points, the frequency of consumption declined considerably.

Antecedents Factors that Influence Soy Consumption: A Structural Equation Modeling Approach AgEcon

We propose a structural model of antecedent factors that affect the frequency of soy consumption. This model, suggests that soy-general knowledge influences perceptions about nutrition concern, health benefits of soy, soy related personal beliefs and personal attitudes toward soy. Health benefits of soy, in turn, impacts soy-related personal beliefs and personal attitudes toward soy. Additionally, soy-related personal beliefs influence personal attitudes toward soy. Finally, both nutrition concern and personal attitudes toward soy drive the frequency of soy consumption. In a survey of UK consumers, we elicited their willingness to accept (WTA) a discount for GM foods and willingness to pay (WTP) a premium for non-GM foods in order to assess their valuation on the non-GM characteristic in food products. A nationwide on-line survey of 3,000 households was conducted. Households were randomly selected from the database of 400,000 households who make up Ipsos-NPD marketing research panel. The purpose of this study is to examine how a household meal planner’s perception of the importance of various dietary components in selecting food items is influenced by the person’s or the household’s socio-demographic factors and health attitude. Using Heckman's sample selection model, consumer willingness-to-pay (accept) premium (discount) for non-GM (GM) cereals was analyzed. Results showed that consumers who were indifferent to the risk of consuming GM foods behaved differently compared to those who were willing-to-pay (accept) premium (discount) for non-GM (GM) cereals.

Our study examined the role of soy health benefits in consumers' soy consumption decision. Given the large number of respondents who reported no consumption of soy products per month, it was important to model the decision of whether or not to participate in soy market separately from the consumption intensity decision. Estimation results demonstrate that knowledge of health benefits affects both the likelihood of participation and consumption intensity. That is, consumers with higher soy health knowledge are more likely to enter soy food market and consume soy products more often when compared to those with less soy knowledge. Yet, perceived taste and convenience had considerably greater impact on soy behavior when compared to soy health knowledge.
