This study estimates demand during the 1980-90 period for wholesale beef cuts by season and by trend. A data set containing monthly nominal prices for wholesale cuts and average choice boxed beef from January 1980 to December 1990 was collected from multiple sources. The approach expressed the change in demand for wholesale cuts as the change in the price ratio of individual cuts relative to the price of boxed beef. This approach shows changes in amount by season and over time relative to the average wholesale cut. Brisket, Armbone Chuck, Bottom Gooseneck, and Knuckle showed the strongest demand in winter and lowest in summer. Using IRI Infoscan store-level data or Prego and Ragu brands of spaghetti sauces, estimates were obtained for own-price, cross-price, and advertising elasticities for Houston, TX and Dallas/Ft. Worth, TX markets via the use of SUR (Seemingly Unrelated Regression) technique. As well, impacts of featuring, display, and free-standing inserts on movement of spaghetti sauces at the store level were obtained. Dynamics in item movement also were captured. Within a particular market for a given brand, coefficients of factors affecting movement of spaghetti sauce were different across stores. |

Several contemporary models of consumer demand comprise complete sets on nonlinear demand functions. Estimation methods should take into account parameter nonlinearity, cross-equation correlation, variance-covariance singularity of the disturbance terms, and various parameter restrictions. To date, mixed demand systems have been all but ignored in empirical work. A possible reason for the scarcity of such applications is that one needs to know a priori which prices and quantities are endogenous in the mixed demand system. By using a directed acyclical graph (DAG), causal relationships among price and quantity variables are identified giving rise to a causally identified demand system (CIDS). A statistical comparison is made of the traditional Rotterdam model with a Rotterdam mixed demand system identified through the use of a DAG. In this analysis, the respective Rotterdam demand systems consist of five products: steak, ground beef, roast beef, pork, and chicken. |

Models are developed to measure the effect of socioeconomic factors on the probability of consuming fish and shellfish in both the away from home and at home markets. Factors that significantly affect the likelihood of eating fish and shellfish at home include urbanization, region, race, ethnicity, age, diet status and income. On the other hand, region, employment, diet status, household size, age and income significantly affect the likelihood of eating fish and shellfish away from home. |

Three key questions regarding lamb promotion are addressed: (1) Have industry efforts to promote lamb shifted out the total demand for lamb? (2) Have any returns to producers achieved been greater than the cost of the promotion? (3) What has been the effect of lamb promotion on the lamb import share? The first question is addressed through an econometric analysis of the U.S. retail demand for lamb which takes into account the effects of lamb advertising and promotion expenditures. The results then are used to calculate a benefit-cost ratio for lamb promotion in answer to the second question. Key determinants of monthly wholesale prices for 12 beef cuts include the quantity of the specific cut, stickiness in prices, marketing costs, quantities of pork and chicken, and seasonality. Seasonal patterns across the respective cuts are very different. Relative to the price in December, prices at the wholesale level in other months can be as much as 6 percent lower to as much as 21 percent higher. |
