Relationship Quality and Innovation Capacity of Chains: The Case of the Traditional Food Sector in the EU AgEcon
Gellynck, Xavier; Kuhne, Bianka; Weaver, Robert D..
The purpose of the paper is to explore how the perceived relationship quality is related to the innovation capacity in chains of the traditional food sector. Based on suggestions from theory and previous studies, empirical evidence is drawn from a survey of 90 traditional food chains including 270 chain partners from three European countries in four traditional food product categories. Heterogeneity across these chains is first examined based on cluster analysis that identifies three distinct clusters interpreted as reflecting three levels of intensity in innovation capacity: high, medium, and low. Next, we define measures of the chain relationship quality through characteristics such as trust, conflict and reputation. Results suggest that various aspects...

Networks in Rural Economy: Valorising Endogenous and Exogenous Drivers of Innovation AgEcon
Vermeire, Bert; Gellynck, Xavier; De Steur, Hans; Viaene, Jacques.
Historically, perspectives on the economic development of rural regions have been dominated by the modernization model of agriculture (van der Ploeg and Van Dijk, 1995). During the last decades this model has increasingly been abandoned in an effort to reduce the negative outcomes associated with that model, driven by the changing concerns of consumers and society in response to these outcomes (van der Ploeg, 1999, Weatherell et al., 2003). Parallel to this socioeconomic evolution the theoretical perspectives on rural development altered. Discourses about the evolution of rural development describe the succession of an exogenous, modernist model of rural development by an endogenous model and in the end leading to an integrated model of rural development,...

Towards the Development of Innovative Strategies for Traditional Food Chains in the EU AgEcon
Molnar, Adrienn; Gellynck, Xavier; Vanhonacker, Filiep; Verbeke, Wim.
Traditional food products (TFPs) represent an important part of each European Member State’s cultural heritage and provide critical economic inputs to many regions via their production and sale. Nevertheless, a major challenge for the traditional food sector is to improve its competitiveness by applying innovations while at the same time maintaining traditionalism. Therefore, modernization of all aspects of the traditional food sector is necessary with special emphasis on the integrity of chains (EC, 2007). This illustrates a need for a chain strategy for the traditional food sector in the EU. Despite this recognition, the actual development of such chain strategies lags behind because of some particular issues which still needs to be addressed (e.g....

Barriers and Drivers of Innovation in Traditional Food Networks AgEcon
Kuhne, Bianka; Gellynck, Xavier; Vermeire, Bert; Molnar, Adrienn.
In the European Union the awareness to retain cultural heritage within the different European regions is rising. An important element of the cultural heritage is the production of traditional food products. Few published studies are related to traditional food products and even less to innovation in this specific food sector. Taking into consideration the increasing demand for traditional food products and the importance of innovation to gain competitive advantage, there is a great need to carry out research in this field. In the frame of this research a traditional food network is understood as the network of traditional food firms, research centers and stakeholders of this sector. A traditional food firm (TFF) is comprehended as a manufacturer of...

Consumer Perception of Bread Quality AgEcon
Gellynck, Xavier; Kuhne, Bianka; Van Bockstaele, F.; Van de Walle, D.; Dewettinck, K..
Bread contains a wide range of important nutritional components which provide a positive effect on human health. However, the consumption of bread in Belgium is declining during the last decades. This is due to factors such as changing eating patterns and a increasing choice of substitutes like breakfast cereals and fast foods. The aim of this study is to investigate consumer’s quality perception of bread towards sensory, health and nutrition attributes. Consumer’s quality perception of bread seams to be determined by sensory and health attributes. Three clusters of consumers are identified based on these attributes. In the first cluster, consumers’ quality perception of bread is not dependent on the health attributes it embraces, but to some extent on...

PERFORMANCE IMBALANCES IN THE CHAIN: EU TRADITIONAL FOOD SECTOR AgEcon
Molnar, Adrienn; Gellynck, Xavier.
Organizations nowadays no longer compete as independent entities, but as chains (Christopher, 1998; Cox, 1999; Lambert and Cooper, 2000). Hence, being part of a well-performing chain is crucial for the future of the individual food firm, especially in the context of the globalizing economy. As a result, the objective of this study is to identify performance imbalances of traditional food chains. Therefore, quantitative data were collected via individual interviews with 271 chain members (91 suppliers, 91 focal companies and 89 customers) of 91 traditional food chains from three European countries (Belgium, Italy and Hungary), representing six different traditional food product categories (cheese, beer, ham, sausage, white pepper and bakery). The results...

Horizontal and Vertical Networks for Innovation in the Traditional Food Sector AgEcon
Gellynck, Xavier; Kuhne, Bianka.
The locus of innovation is not the individual firm anymore but increasingly the network in which the firm is embedded. Hence, in this paper innovation is investigated in the broader context of networks and applied to the traditional food sector. Networking refers to a process of identifying and acting on complementary interests with or without formal means of cooperation and plays an important role for the diffusion and adoption of innovations, because they increase the flow of information. Two main types of networks exist. Vertical networks relate to cooperation of partners belonging to the same chain. Meanwhile, horizontal networks refer to cooperation among firms which are primarily competitors. Data were collected during focus groups and in‐depth...

Network performance - What influences it? AgEcon
Lefebvre, Virginie M.; Molnar, Adrienn; Gellynck, Xavier.
The aim of this paper is to examine the literature addressing network performance and the factors influencing it. Design – 29 papers published in 18 different journals were systematically reviewed through a multidimensional classification framework based on the strategy-structure-performance paradigm of strategic management. Findings – Based on the outputs of the literature review, a conceptual framework describing network performance is proposed. Following this framework, it is suggested that network performance is the result of the combination of network strategy, network structure and external environmental factors, and not solely the result of network structure which is characterized by five structural elements i.e. network configuration, network...

Contribution of Cluster Relations to Food Competitiveness in the EU AgEcon
Vermeire, Bert; Gellynck, Xavier.
The participation in regional networks is an important factor in explaining the food companies’ innovation capacity which – in turn - is an important driver of competitiveness (Gellynck et al., 2006a; Gellynck et al., 2007). Further, it is argued in cluster theory that intensive networking between related companies and other actors in a given region is a driver of competitive advantage of this region (Enright, 1998; Porter, 1998). In this paper the food cluster is understood as a set of geographically and socially embedded network relations based on a range of complementarities and communalities between regional actors and enhancing the competitiveness of the regional food industry. Each cluster shows distinct patterns of learning and uses different...

Conceptual Framework for Measuring Supply Chain Performance: An Innovative Approach AgEcon
Molnar, Adrienn; Gellynck, Xavier; Kuhne, Bianka.
The process of developing appropriate supply chain performance measurement instruments is difficult due to the complexity of supply chains. This paper presents an overview and evaluation of the performance measurement instruments used in supply chain models. As a result it advances a framework for developing an innovative supply chain performance measurement instrument which is generally applicable and which incorporates single organisational measures with inter-organisational and supply chain measures. The instrument distinguishes between qualitative and quantitative performance measures. Finally, it proposes supply chain satisfaction balance/ imbalance, as a qualitative supply chain performance measure.

Imbalances of chain performance: the case of the traditional food sector in the EU AgEcon
Molnar, Adrienn; Gellynck, Xavier.
Purpose: Measure chain performance in the traditional food sector and identify the main relationship measures determining performance. Methodology: Survey with 271 chain members from 91 traditional food chains from 3 European countries in 6 traditional food product categories. First 12 types of performance imbalances are distinguished and subsequently, cluster analysis is carried out. Finally, the nature of imbalances is linked to the quality of chain relationships. Findings: Three clusters are demarcated. Cluster one represents chains being characterized by higher performance of both suppliers and focal companies as compared to customers, while cluster three represents chains with high customer and focal company performance as compared to suppliers....

What Can We Learn from Best Practices Regarding Food Chain Transparency? AgEcon
Molnar, Adrienn; Van Lembergen, Katrien; Gellynck, Xavier; Sebok, Andras; Berczeli, Attila.
This paper reports on food chain transparency. The research specifically aims to investigate best practices. Therefore, inductive research was conducted, starting with the identification of best practices. Further, underlying patterns were investigated to derive hypotheses and to develop a theoretical framework. These were confronted with literature findings which resulted in the validation of the hypotheses and the theoretical framework. Overall it can be concluded that several types of food chain transparency exist, whereas the different types represent a hierarchy of transparency domains, and that the basis mainly applies to information quality. In addition, it is shown that performance indicators measure directly or indirectly the success of...

TRANSLATING LATENT TRENDS IN FOOD CONSUMER BEHAVIOR INTO NEW PRODUCTS AgEcon
Gellynck, Xavier; Kuhne, Bianka; Van Wezemael, Lynn; Verbeke, Wim.
For successful product development it is important to explore the latent changes in consumer behavior prior to the product development process. The identification of a latent trend before the manifestation moment can be achieved by trend analysis. Trend analysis delivers insights that explore the future in order to identify prospective consumers and new product ideas, but also includes a feeling for the currents in market and technology. Hence, the aim is to identify emerging weak signals in consumer behavior that have potential as large revenue opportunities when implemented into new products. Therefore, the objective of our paper is to provide a novel tool for this identification and how the identified trends can be translated into new products. Until...

Supply Chain Competences: The Case of the Traditional Food Sector in the EU AgEcon
Molnar, Adrienn; Kuehne, Bianca; Sebok, Andras; Gellynck, Xavier.
Since over the last twenty years the reduction of trade barriers, the increasing liberalisation, the advancement in ICT have determined a growth in the horizontal and vertical competition among firms in the chain. Therefore, today more than ever they are pressured to develop appropriate strategies in order to become more competitive (Montgomery and Porter, 1993; Grant, 1996; Porter, 1996). However, firms nowadays no longer compete as independent entities, but as chains (Fearne, 1998; Van der Vorst et al., 1998; Sahay, 2003; Green and Inman, 2005; Green et al., 2006; Hult et al., 2007; Ketchen and Hult, 2007; Sezen, 2008) and consequently, the dynamic and mutually dependent character of relations in these chains cause a challenge for these firms towards the...

Transparency Solutions for Increasing Trust along the Food Chain AgEcon
Sebok, Andras; Berczeli, Attila; Molnar, Adrienn; Van Lembergen, Katrien; Gellynck, Xavier.
The concept of products having designated country of origin was investigated. It was established that a coherent approach can be developed by systematic organisation and structuring of the available information. A working definition was developed for identification of successful practices in food transparency. Several successful solutions for increasing transparency along the food chain were identified. The lessons learned from these solutions can be used for better understanding of the problems related to the transparency of claims and statements on food products having designated country of origin and for increasing the transparency about the validity of such statements and claims

Chain Networks as a Leverage for Innovation Capacity: The Case of Food SMEs AgEcon
Kuhne, Bianka; Gellynck, Xavier.
Nowadays, innovation is no longer limited to the individual firm but involves increasingly the chain network in which the firm is embedded. The chain network is considered as the place where the internal and external resources of a firm are combined and transformed, leading to innovation capacity. In the increasingly globalizing market, innovation is an important strategic tool for small and medium sized enterprises (SMEs) to achieve competitive advantage. However, SMEs are often confronted with barriers for developing and introducing innovations, such as the lack of economies of scale. Our paper investigates how the chain network is contributing to the enhancement of the innovation capacity and which chain network characteristics are crucial in this...

Network connections and innovation capacity in traditional agrifood chains AgEcon
Kuhne, Bianka; Gellynck, Xavier; Weaver, Robert D..
In the New Economy, the network is considered as more important than the firm itself. In this paper the focus is on chain networks which include vertical networks among chain members, horizontal networks with peers, and networking with third parties. Networks have an important role in the diffusion and adoption of innovations, thus they are the locus of innovation. While previous research focused on the firm, we contribute to the understanding of innovations in chain networks, i.e. we investigate the innovation capacity in vertical networks and how networking with peers and third parties is influencing the innovation capacity of the vertical network. We propose that there is a positive relationship between the network connections the direct chain partners...

Food Chain Networks as a Leverage for Innovation Capacity AgEcon
Kuhne, Bianka; Gellynck, Xavier.
Chain networks of manufacturers of traditional food products comprehend a large majority of micro-, small-, and medium-sized enterprises (SMEs – firms employing less than 250 people). In a more and more globalised market with increasing competition, innovation is an important strategic tool for SMEs to achieve competitive advantage (Avermaete et al., 2004a, Gellynck et al., 2007, Murphy, 2002). Innovation can be defined as an ongoing process of learning, searching and exploring, resulting in new products, new techniques, new forms of organisation and new markets (Lundvall, 1995) which are new to the firm and to the industry ranging from incremental to radical innovations. Within our study traditional food products are defined according to four criteria:...
