Analysis of Consumer Food-Handling Practices from Grocer to Home Including Transport and Storage of Selected Foods 31
Godwin, Sandria L.; Coppings, R.J..
Consumers were interviewed about how they purchase, transport, store, and otherwise handle food. Emphasis was placed on handling of cold foods and home refrigeration. More than 70% of consumers took steps to protect cold foods during purchase and transport and more than 90% claimed to put away cold foods first. Only 7% of consumers used coolers to protect cold foods during transport. How consumers stored a variety of foods was determined and evaluated. Few consumers knew their own or correct refrigerator temperature and few had refrigerator thermometers. A second interview and refrigerator checklist were completed in 200 of the consumers'’ homes at least a year later. Researchers judged that circumstances that might allow for cross-contamination existed in...

Evaluating the Nutrition Label: Its Use in and Impact on Purchasing Decisions by Consumers 31
Godwin, Sandria L.; Speller-Henderson, Leslie; Thompson, Cindy.
Nutrition labels on food products-which are required for most prepared foods, such as breads, cereals, canned and frozen foods, snacks, desserts, drinks, etc.-were first mandated in the early 1970s. They were revised extensively in 1992 as part of the Nutrition Labeling and Education Act (NLEA). Recently the Food and Drug Administration called for public comment on proposed changes to the program and solicited research related to the use and impact of the current label. In response to this request, a short consumer survey was conducted with 160 persons to see if they use the label, and, if so, which parts they use and their opinions about the usefulness of the current label. The majority of the respondents said they read the label most of the time before...

Lack of Easy Accessibility as a Potential Barrier to Adequate Fruit and Vegetable Consumption by Limited-Resource Individuals 31
Godwin, Sandria L.; Tegegne, Fisseha.
Encouraging people to use their resources to purchase more fruits and vegetables is often at the top of the list of topics addressed by nutrition educators. Still, most populations are not consuming nearly enough fruits and vegetables according to a 2003 FAO/WHO Expert Report on Diet, Nutrition, and the Prevention of Chronic Diseases. This is particularly troubling given the surge of new research suggesting that fruits and vegetables can help prevent nutrient-deficiency disorders and also reduce the risk of cardiovascular diseases and cancer. Low-income individuals and households tend to spend less on and consume fewer fruits and vegetables than do their higher-income counterparts. A survey by the Economic Research Service (2004) shows that 19% of...
