Over the last 20 years the cheese manufacturing sector has become the most important market for U.S. farm milk. Using a plant-level dataset encompassing the 1972-1997 period we examine the production characteristics of this industry. Using the results obtained from our cost function we estimate a series of measures of input substitutability and scale economies.

An Econometric Analysis of Brand Level Strategic Pricing Between Coca Cola and Pepsi Inc. AgEcon

Market structure and strategic pricing for leading brands sold by Coca Cola and Pepsi Inc. are investigated in the context of a flexible demand specification and structural price equations. This approach is more general than prior studies that rely upon linear approximations and interactions of an inherently nonlinear problem. We test for Bertrand equilibrium, Stackelberg equilibrium, collusion, and a general conjectural variation (CV) specification. This nonlinear Full Information Maximum Likelihood (FIML) estimation approach provides useful information on the nature of imperfect competition and the extent of market power.

A growing trend in demand analysis during the last two decades is the use of household survey data. Detailed demographic information collected in these surveys allows treatment of heterogeneous preference and the typically large sample also allows estimation of large demand system that are otherwise not possible with aggregate time series. However, the use of household-level data is complicated by the censoring of the dependent variable especially for systems with disaggregated commodity definitions. IDENTIFYING THE EFFECTS OF GENERIC ADVERTISING ON THE HOUSEHOLD DEMAND FOR FLUID MILK AND CHEESE: A TWO-STEP PANEL DATA APPROACH AgEcon

A two-step model with sample selection is applied to panel data of U.S. households to estimate at-home demand for fluid milk and cheese, incorporating advertising expenditures. The model consistently accounts for sample-selection bias, unobserved household heterogeneity, and temporal correlation. Generic advertising programs for fluid milk and cheese were effective at increasing conditional purchase quantities, with very little effect on the probability of purchase. In contrast to aggregate studies, the long-run generic advertising elasticities for cheese were larger than for those of fluid milk. Advertising response varied considerably across sub-product classes, while branded advertising expenditures were largely insignificant.

An endogenous switching regression model is used to examine how meal planner health knowledge affects dietary fat intake. Ethnicity, income, meal planner age, being on a low-fat diet, and other health awareness behaviors had significant effects on health knowledge. After controlling for differences in household and meal planner characteristics, intake of total and saturated fat was found to depend on health knowledge status.

The demand for fluid milk products has changed dramatically in recent years not only in terms of lower levels consumed but also in terms of the composition of the products consumed. A time-series based demand system analysis of the market for lowfat and whole milk products is developed incorporating the effects of changes in prices and demographic characteristics. From the estimated model, the impacts of future changes in the demographic profile of the U.S. population on fluid milk demand are analyzed.

FACTORS AFFECTING U.S. DEMAND FOR REDUCED-FAT MILK AgEcon

U.S. fluid milk consumption has changed dramatically since the early 1970s. Whole milk accounted for over 81% of commercial fluid milk disappearance in 1970. By 1993, this percentage was less than 39%. A three-equation fluid milk demand system is estimated for fluid milks that vary by fat content. The household panel data set used includes over 4,300 households who recorded fluid milk purchased for at-home consumption over a 12-month period. Given that many of these households did not consume one or more of the three milk types, the econometric model explicitly incorporates the censored nature of these commodity demands. Own and cross-price and substitution elasticities are estimated along with effects of household demographic characteristics.

The Demand for Organic Food in the U.S.: An Empirical Assessment AgEcon

This analysis examines the determinants of organic food purchase behavior of a random sample of U.S. food shoppers. We analyze food expenditures conditional upon whether a household purchases organic foods. The results from our econometric modeling effort identify shopping venue, awareness of the organic label, positive beliefs toward organic foods, a positive attitude toward cooking, and a lack of religious affiliation as being important determinants of organic food purchases. Income was not found to significantly affect the decision to buy organic foods. A DOUBLE-HURDLE MODEL OF FOOD DEMAND WITH ENDOGENOUS UNIT VALUES AgEcon

This study develops a unique double-hurdle model of demand for composite food commodities which endogenizes unit values. The model structure allows us to account for the inability to observe such values for non-purchasing households and simultaneously adjusts for quality demand effects reflected in these unit values. Application to Mexican household food expenditure data shows the importance of controlling for the quality of composite goods. We find that poultry and pork expenditures depend on both quantity demanded and quality desired.

THE DECISION OF WHEN TO BUY A FREQUENTLY PURCHASED GOOD: A MULTI-PERIOD PROBIT MODEL AgEcon

Increased availability of scanner-based panel data has enabled researchers to better understand nondurable commodity purchase dynamics. In this study, we focus on one component of the purchase process--when to buy. The relationship between the discrete purchase decision and a set of household and purchase characteristics is quantified using a simulated maximum-likelihood procedure. Given the longitudinal nature of our data, unobserved heterogeneity is addressed by adopting an auto-correlated error structure. Our empirical application is household purchases of cheese. We find evidence of significant persistent unobservable household heterogeneity, which is not eliminated by the inclusion of lagged exogenous variables.

CONSUMER PROMOTION AND PURCHASE TIMING: THE CASE OF CHEESE AgEcon

The dynamics of cheese purchases is analyzed by estimating a series of econometric models of duration based on a 170 week household panel. Besides purchase quantity and price data, information with respect to coupon use and household demographic characteristics are used in a variety of models which build upon each other in terms of assumed distribution of interpurchase time, effect of previous purchases, role of demographic characteristics and effect of unobserved interpurchase time heterogeneity. Likelihood ratio tests clearly reject the null hypothesis that coupon use has no impact on cheese purchase timing.

Quantifying the Structure of Food Demand in China Using a Generalized Quadratic AIDS Specification AgEcon

This manuscript is used to examine food demand structure and its dynamics for 11 commodities in urban China. The analysis is based on household-level expenditure survey data for two cross-sectional surveys of Chinese households pertaining to food expenditure patterns during 1995 and 2003. A major focus of this presentation is on the pre-committed component of demand that is not accounted for by economic and demographic characteristics.
