Fish require diets containing 30 to 55% of crude protein and an amino acid supply precisely adapted to meeting the needs for optimal growth. Genetic adaptation to dietary environments is a key process in the evolution of natural populations and is of great interest in animal breeding. In fish farming, the use of fish meal and fish oil has been widely challenged, leading to the rapidly increasing use of plant-based products in feed. However, high substitution rates impair fish health and growth in carnivorous species. Two diets based oil fish meal (FM) or oil a mixture of plant protein sources supplemented with free amino acids (PP) were fed to rainbow trout having a mean initial body weight of 162.5 g reared at 17 +/- 1 degreesC for 24 weeks to evaluate the effect of plant protein sources oil fish growth, morphological and body quality traits. The enzyme glucokinase (GK) (EC 2.7.1.1) plays an important role in the control of glucose homeostasis. Qualitative and/or quantitative variations in GK enzyme have been postulated by previous studies to explain why dietary carbohydrate utilisation is lower in gilthead seabream (Sparus aurata) and rainbow trout (Oncorhynchus mykiss) than in common carp (Cyprinus carpio). For developing efficient diets, two sets of experiments examined whether the use and allocation of dietary protein can be traced by labelling with stable isotopes (N-15 and C-13) in two culture fish (Oncorhynchus mykiss and Sparus aurata). In the first experiment, natural abundance and tissue distribution of these isotopes were determined, by measuring the delta C-13 and delta N-15 values by isotopic ratio mass spectrometry, in fingerlings (14-17 g) adapted to diets differing in the percentage of fish meal replacement by plant protein sources. This preliminary study assessed genotype x diet interaction in late growth of European sea bass (Dicentrarchus labrax) fed with either a fish meal (FM)- or a fish oil (FO)-based diet (M) or an all-plant-based (PB) diet. A total of 550 fish from 224 families were reared together and tagged. DNA was sampled and microsatellites were used to assign parentage. When fish weight was 192 +/- 54 g, two tanks were fed with M (FM: 100%; FO: 100%) and two others with PB (FM: 0% and FO: 0%). Facing the finite size of fisheries resources, the important increase of aquaculture production during the last decades has led to the evolution of feed composition with an increasing substitution of fish meal and fish oil with terrestrial plant products. During the same period, selective breeding has been developed in fish and major improvements were achieved on growth, resulting in 4 to 20 % gain per fish generation (Olesen, Gjedrem, Bentsen et al. High energy extruded diets were formulated to contain the same level of protein supplied either by soy protein concentrate (SPC) or fish meal. Three experiments were performed in order to measure voluntary feed intake and feed waste, faecal losses and soluble losses of nitrogen and phosphorus in rainbow trout (average body weight: 100 g). To face future decrease of marine resources, replacement of fishmeal and fish oil by plant products is nowadays worldwide priority for the aquaculture of carnivorous fish, especially salmonids.
