I det økologiske forskningsprojekt, HighCrop, under GUDP - går økologiske planteavlere, konsulenter og forskere sammen om at finde ud af, hvordan planteavlen på de økologiske planteavlsbedrifter kan udvikles til at være mere robuste og bæredygtige. Et af indsatsområderne er, via interviewbesøg med 10 økologiske planteavlere, at afdække, hvordan den faglige viden når ud til landmændene og hvilke rådgivningstiltag og redskaber der bedst muligt kan understøtte denne videndeling. Denne rapport beskriver det teoretiske og metodiske grundlag for denne barriere undersøgelse

Danish case report: The Danish Food Communities Organic Eprints

The Food Communities was chosen as a case for HealthyGrowth because they constitute a major novelty within the Danish foodscape. As indicated in section 3, the Food 2 Communities have emerged as the latest incarnation of a series of attempts to forge alternative food networks operating beyond the supermarket system. Denmark is distinguished by a large market share of organic food being sold via supermarkets, but The Food Communities are a novelty due to two factors, (1) they have experienced a rapid growth since the outset in 2010, and (2) they are organised in a decentralised manner, where they continue to split up the network in chapters, each operating within their distinct local area. The Food Communities are a predominantly urban phenomenon.

Nye udviklingsveje for afsætning af økologiske kyllinger Organic Eprints

Økologiske kyllinger fylder under 1% af kyllingesalget, og samtidig er kyllinger en af de varegrupper, hvor det økologiske markedsandel er lavest. Den gennemsnitlige økologiske markedsandel er eksempelvis på 7%, og for enkelte varegruppers vedkommende er den mere end 25% (æg og mælk). Derudover er aspekter som dyrevelfærd, bæredygtighed og smag, hvor den økologiske kyllingeproduktion kan adskille sig markant fra den konventionelle produktion, vigtige elementer i forbrugernes valg af dagligvarer, og der synes såle-des at være et stort potentiale for at udvide markedsandelen af økologiske kyllinger. A sustainable agriculture is dependent on how we care for and cultivate our soil. Not only in terms of producing food of good quality, but also in terms of maintaining the quality of the soil to feed future generations, nature of the farm land, of the surrounding landscape, and not least the quality of rural livelihood. From a neoclassic perspective the market is seen as driver of a sustainable development, depending on will of the political consumer. The Danish food system has undergone a transition in the past 10-20 years, in which new quality conventions have evolved. Our working group aims to discuss successful approaches of managing increasing quantities of organic food produce - successful in terms of maintaining product quality, trust, integrity and higher value while at the same time increasing turnover. We will focus on two aspects in particular, firstly, the kinds and quality of cooperation of farmers with processors such as dairies, mills, bakeries or oil presses, and secondly, the successful management of growth in value chains including strategies, communication and limiting and enabling factors.

Value is a key concept for understanding how organic food networks function because values are the foundation of the organic production practice, thus value must be given a significant role in assessing and balancing the effects of organic food networks. The challenge to multidimensional farm management is analysed and discussed from the perspective of the farm enterprise, explored within a logo-poietic framework as a self-organising system/network. In conclusion, development of management of multidimensional farming takes: a reconstruction of the values, ideas, and meaning around which the farm enterprises are organised, a new way of increase of nonredundant complexity, shifting from dimension reduction to contextualisation, and a development of interactive relationships that facilitate network building of multidimensional farming.

Øget afsætning af økologiske kyllinger - hvad skal der til? Organic Eprints

Kyllingekød er et af de produkter, hvor der er størst forskel mellem den økologiske og den konventionelle produktionsform, når det gælder dyrevelfærd og kvalitet. Alligevel er under 1 pct. af kyllingerne på de danske spiseborde økologiske, og halvdelen af dem er importeret fra udlandet. Set i forhold til andelen af økologi i andre varegrupper er der således et kæmpe potentiale for at øge salget af økologisk kyllingekød – også selv om de økologiske kyllinger er dyrere end konventionelle.
