Em cálculos da quantidade de energia requerida em processos de secagem artificial de um produto agrícola, é necessário o conhecimento de uma expressão para a determinação do calor latente de vaporização (H) de água no produto. Normalmente, as expressões para H, encontradas na literatura, são dadas pelo calor latente de vaporização (h) de água livre multiplicado por funções que dependem apenas do teor de água do produto. Isso significa que a relação H/h, para um dado produto, só depende do teor de água, o que é uma simplificação, pois se sabe que tal relação depende também da temperatura. In this article, a methodology is used for the simultaneous determination of the effective diffusivity and the convective mass transfer coefficient in porous solids, which can be considered as an infinite cylinder during drying. Two models are used for optimization and drying simulation: model 1 (constant volume and diffusivity, with equilibrium boundary condition), and model 2 (constant volume and diffusivity with convective boundary condition). Neste artigo, teve-se o objetivo de determinar curvas de secagem em camada fina para grãos de feijão macassar, variedade sempre-verde. Visou-se, também, à determinação da difusividade efetiva da água no interior do produto, bem como a energia de ativação. Para tal, foram utilizadas amostras com 150 g de feijão com teor inicial de água de 37% (bu), nas temperaturas de 40; 50 e 60 ºC. A velocidade do ar do secador convectivo foi mantida em 1,0 m s-1 e, durante todo o processo, os valores médios da temperatura e da umidade relativa do ar ambiente foram, respectivamente, 29 ºC e 58%. ABSTRACT The objective of this study was to describe the technological process involved in the drying kinetics of fresh-cut prickly pear shoots through numerical and analytical solutions. Shoots of two different prickly pear species were used, ‘Gigante’ and ‘Miúda’. Drying was performed at different temperatures (50, 60, 70 and 80 °C) and weighing procedures were made continuously. The experimental data were expressed as moisture ratio. The Page model showed the best fit to the drying kinetics of minimally processed ‘Gigante’ and ‘Miúda’ prickly pear shoots, with the best coefficients of determination and Chi-square. Neste trabalho propôs-se estudar a estabilidade física e química de geleias convencionais de umbu-cajá durante o armazenamento por 180 dias em condições ambientais. As geleias foram formuladas por meio de planejamento experimental fatorial 22 com 2 experimentos no ponto central resultando em 6 experimentos, variando-se as concentrações de açúcar cristal (50, 55 e 60%) e pectina de alto teor de metoxilação (0,5; 1,0 e 1,5%). ABSTRACT This study assessed the fitting of mathematical models to the convective drying kinetics of osmotically pre-dehydrated papaya cubes. Papaya cubes were subjected to osmotic dehydration in sucrose solutions at 40 and 50 ºBrix, at temperatures of 50 and 60 ºC, followed by complementary convective drying in forced air circulation oven under three temperatures (50, 60 and 70 °C) and constant air velocity of 1.0 m s-1. ABSTRACT Passion fruit has the peel (albedo and flavedo) as its major component and it can be used in the production of flour as source of nutrients and enrichment of food products. Thus, this study aimed to evaluate the production of flours from passion fruit albedo and whole peel, verifying the influences of flavedo removal and maceration, as well as the variation in drying temperature (70 and 80 °C) on the physical and chemical characteristics of the flours.
