El mercado de la carne se ha visto afectado por las recientes crisis alimentarias. La decisión del consumo se ve afectada por el precio, y éste por las características del producto y otros factores que pueden influir en la utilidad del consumidor. A través de la metodología de los precios hedónicos, nuestro objetivo es determinar el valor económico asignado por el consumidor a las características de la carne que influyen en su decisión de compra. Se utiliza información proporcionada por dos encuestas a 540 consumidores de la ciudad de Zaragoza en 2001 y 2002. Demand Analysis for Fish in Tunisia: An Empirical Approach AgEcon

The aim of this paper is to analyze and determine the factors influencing fish demand in Tunisia during the 1975-2000 period. A Box-Cox transformation is used to select the appropriate functional form between linear and double-log models. Results indicate that the double-log form fits better the data and is used for the empirical analysis. Calculated elasticities from static model show that fish demand is price-inelastic and that fish can be considered as a normal good. However, the dynamic analysis using Houthakker-Taylor model suggests that fish consumption in Tunisia depends on consumers psychological-buying habits. The food habits and dietary patterns of American consumers are changing and they are increasingly demanding food products that possess certain attributes relating to how the food was produced or processed. The objectives of the study are to analyze household purchase of fresh tomatoes and to determine the magnitudes of the price premium paid for the organic tomatoes by estimating a hedonic price model. The study uses the 2003 ACNielsen Homescan panel data. The data set represents a nationally representative panel of U.S. households, which provide food purchase data for at-home consumption. DETERMINANTS OF PARTICIPATION AND CONSUMPTION: THE CASE OF CRAWFISH IN SOUTH LOUISIANA AgEcon

This study investigates the determinants of crawfish consumption in South Louisiana using a generalized limited dependent variable model that accounts for both participation and consumption decisions. Income, Catholic, white, and household size increase the likelihood of crawfish consumption but not the conditional level of consumption. Education and employment status are among the other household characteristics that determine the conditional level of consumption.
