ABSTRACT In 2006, the International Organization for Standardization (ISO) published two standard protocols for the detection and enumeration of Campylobacter spp. in foods: the ISO 10272-2(direct method) and the ISO 10272-1 (enrichment method). The aim of this study was to compare the efficiency of these two methods in the detection of Campylobacter spp. and propose a modification in the enrichment method. Compared with the enrichment method, the direct method yielded a higher number of positive results for Campylobacter spp. and, consequently, presented higher sensitivity percentage. Objectives of this study were to investigate the process sensitivity to Campylobacter spp. and to assess the reduction efficiency of ozonation and chlorination in chilling step of the poultry process using data derived from mCCDA plating and SimPlate MPN methods. Samples of 80 were collected from 4 process steps in the processing plant (scalding, plucking, inside outside washing, and chilling). Numbers of Campylobacter spp. on mCCDA at the respective steps were 3.35, 3.20, 2.68 and 0.20 logCFU/ml, while the SimPlate MPN had 2.54, 2.48, 2.31 and 0.84 log CFU/ml, respectively. Ocorrência de Campylobacter spp. em carne e miúdos de frango expostos ao consumo em Belém, Pará Arq. Bras. Med. Vet. Zootec.

In order to study Campylobacter in chicken meat exposed to consumption in the city of Belém, state of Pará, Brazil, 16 samples (four of liver, four of gizzard, two of heart, two of skin, one of neck, two of carcass and a mixture of neck skin and fragments of the abdominal cavity), collected in clandestine butcher shops, fair-free and supermarkets were submitted to isolation and identification according to the recommended methods. In high percentage, the foods exposed to consumption were contaminated by this agent, meaning a potential risk to the human health.

Campylobacteriosis is a worldwide distributed zoonosis. One of the main virulence factors related to Campylobacter spp. in animals and humans is the cytolethal distending toxin (CDT), encoded by three adjacent genes (cdtA, cdtB, cdtC). The occurrence of Campylobacter spp. in samples of vegetables has not been reported in Brazil yet, and has seldom been described in the international literature. Enumeração de Campylobacter spp. e presença de Campylobacter jejuni em carcaças de frango no estado de Minas Gerais Ciência Rural

Campilobacteriose é uma zoonose de distribuição mundial, com repercussões importantes na saúde pública e um grande impacto socioeconômico. As rotas de transmissão ao homem das espécies de Campylobacter são o contato direto com animais portadores, água ou alimentos contaminados e é mais comumente associado ao consumo de carne de frango. O objetivo deste estudo foi detectar e enumerar Campylobacter spp. por um método rápido (SimPlate®) e pelo método convencional (plaqueamento direto em ágar mCCD), determinando a frequência e o nível de contaminação em 75 amostras de carcaças de frangos (25 Pré-chiller e 25 Pós-chiller obtidos em abatedouros sob inspeção federal no Estado de Minas Gerais e 25 amostras congeladas, coletadas no comércio verejista).
