The aim of this study was to evaluate the microencapsulation of pequi pulp by spray drying. A central composite rotational design was used in order to evaluate the effect of the independent variables: inlet air temperature, surfactant concentration and modified starch concentration. The dependent variables were assumed as yield of the process and the product features microencapsulated. A selection of the best process condition was performed to obtain the best condition of a product with the highest vitamin C and carotenoids content. Powders showed moisture content below 2%. The effectiveness of an aqueous extract of Caryocar brasiliense (Caryocaraceae) Camb pulp, popularly known in Brazil as pequi, against clastogenicity induced by cyclophosphamide and bleomycin was evaluated using an in vivo mouse bone marrow cell micronuclei test, an in vitro Chinese hamster ovary cell (CHO-K1) chromosome aberration test and an in vitro antioxidant assay based on the oxidative damage to 2-deoxy-D-ribose (2-DR) induced by hydroxyl radicals (OH) generated by the reaction between ascorbic acid and (Fe III)-EDTA. The daily consumption of natural antioxidants protects against oxidative damage caused by reactive oxygen species (ROS), including DNA damage, and can reduce the risk of cancer, atherosclerosis and other degenerative diseases. O pequi (Caryocar brasiliense Camb.) é um fruto nativo com ocorrência generalizada no Bioma Cerrado. Abstract Pequi pulp oil, Caryocar brasiliense, is rich in carotenoids, antioxidant compound easily oxidized by the presence of heat, light and oxygen. In order to improve its stability, pequi oil was microencapsulated by complex coacervation using gelatin and Arabic gum as encapsulating agents. Twenty formulations were prepared using a 23 central composite rotational design. The influence of temperature, stirring velocity and core material in the oil coacervation were evaluated, aiming to preserve carotenoids present in the oil. Sementes de pequi (Caryocar brasiliense Camb.) provenientes de frutos coletados do chão e "de vez", foram submetidas aos seguintes tratamentos: choques térmicos úmido (80ºC/15 min) e seco (80ºC/15 min e 50ºC/30, 60, 90 e 120 min), ácido giberélico 100mg/l e 6 benzil aminopurina 10-4M durante 24 horas, ácido sulfúrico conc./ 1 hora e lavagem em água corrente/48 horas. Caryocar brasiliense (pequi), is one of the main species at the biome of the Brazilian savannah due to its use in culinary, popular medicine, industry in general, and iron and steel industry. At São José do Xingu (MT), a tree of C. brasiliense without thorn at the endocarp was found, which enables the improvement of C. brasiliense not only for consumption but also to the high appreciation it already has. To detect the existing differences between the pequi with and without the thorn at the endocarp, RADP markers were used.
