YEH, Yawen; SAWADA, Manabu.
The purpose of this study was to clarify quantitatively Japanese consumers’ valuation of frozen edamame. Two hundred and fifteen consumers living in Obihiro City, Hokkaido, served as respondents. Four different types of frozen edamame (domestic frozen edamame, frozen edamame from Taiwan, frozen edamame from Thailand, and frozen edamame from China) were analyzed in a choice experiment using a conditional logit model. The following results were obtained: 1)...

Valuing Animal Welfare with Choice Experiments: An Application to Swedish Pig Production AgEcon
Liljenstolpe, Carolina.
In this paper, the demand for animal welfare attributes when buying pork fillet is investigated among Swedish respondents. More specifically, the coefficients of an indirect utility function and willingness to pay for animal welfare attributes are estimated. The utility function is estimated using a multinomial logit and a random parameter logit model. A realistic scenario when modeling consumer choices is to allow for heterogeneity in preferences. The random parameter logit model departs from the well known IIA property and allows for a more flexible taste distribution across individuals. The need for assuming randomness of some parameters are evaluated by using a specification testing procedure with artificial variables developed by McFadden and Train...

Consumers want safer meat - but not at all costs AgEcon
Morkbak, Morten Raun; Christensen, Tove; Gyrd-Hansen, Dorte E..
Consumers, the public authorities, and the food industry are all concerned with the safety of meat. The increasing demand for safer food from the consumers and the public authorities puts pressure on producers to identify efficient methods to reduce risks. Earlier studies have shown that consumers state a willingness to pay for safer meat – but we know very little about how different methods to reduce risks affect the consumers’ preferences for safer meat. In the present study, a choice experiment for a representative sample of the Danish population was conducted to elicit whether consumers’ willingness to pay for reducing the risks of Salmonella infections was affected by the specific risk reduction methods (risk reductions using the current policy, at...
