Background Aspartic proteases are a subfamily of endopeptidases that are useful in a variety of applications, especially in the food processing industry. Here we describe a novel aspartic protease that was purified from Peptidase R, a commercial protease preparation derived from Rhizopus oryzae. Results An aspartic protease sourced from Peptidase R was purified to homogeneity by anion exchange chromatography followed by polishing with a hydrophobic interaction chromatography column, resulting in a 3.4-fold increase in specific activity (57.5 × 10³ U/mg) and 58.8% recovery. Transformations in the food processing sectors of developing countries are increasingly seen as strategic from the point of view of export earnings, domestic industry restructuring and dietary issues. This article reviews a selection of the literature on these themes. In Korea, processed food markets have various shapes of structure: the markets of ice cream, special dietary food, noodles, sugar are highly concentrated, while the markets of gimchi, pickles, and ice are not very concentrated. The level of market concentration changes over time. These market structures and structural changes cause impacts on related industries as well as own industries. For the more successful policies, the paper suggests three ideas: to realize that each food processing industry has a different industry structure, to understand the relationship between the food processing industry and upstream and downstream industries and to take into account opinions from various sources before adopting new policies. |

The paper presents a case story of the fall and rise of the food industry in Poland's transition economy, illustrated with the example of one of its most successful companies.
