Listeria monocytogenes, E. coli O157, Salmonella spp. e microrganismos indicadores em carcaças bovinas para exportação Arq. Bras. Med. Vet. Zootec.

Foram colhidas amostras de 100 carcaças em um frigorífico exportador, localizado no interior do estado de São Paulo, amostradas ao longo de um ano, por meio do método de esponjas, aplicado na região do peito do animal. As amostras foram colhidas em três pontos, denominados A, B e C, sendo cada carcaça amostrada nos três pontos, localizados nas etapas: pós-sangria (A); pós-esfola (B) e pós-lavagem (C). Foram realizadas pesquisas de Listeria sp., E. coli O157, Salmonella spp. e microrganismos indicadores (Petrifilms® AC, EC e EB). Não foram isolados Listeria ou E. coli O157 em nenhuma das 300 amostras. Salmonella spp. foi isolada em nove, sendo oito no ponto A e uma no ponto B. Control of Listeria monocytogenes growth in soft cheeses by bacteriophage P100 BJM

The purpose of this study was to determine the effect of bacteriophage P100 on strains of Listeria monocytogenes in artificially inoculated soft cheeses. A mix of L. monocytogenes 1/2a and Scott A was inoculated in Minas Frescal and Coalho cheeses (approximately 10(5) cfu/g) with the bacteriophage added thereafter (8.3 x 10(7) PFU/g). Samples were analyzed immediately, and then stored at 10 ºC for seven days. At time zero, 30 min post-infection, the bacteriophage P100 reduced L. monocytogenes counts by 2.3 log units in Minas Frescal cheese and by 2.1 log units in Coalho cheese, compared to controls without bacteriophage. Bacteriophage amplification assay for detection of Listeria spp. using virucidal laser treatment BJM

A protocol for the bacteriophage amplification technique was developed for quantitative detection of viable Listeria monocytogenes cells using the A511 listeriophage with plaque formation as the end-point assay. Laser and toluidine blue O (TBO) were employed as selective virucidal treatment for destruction of exogenous bacteriophage. Laser and TBO can bring a total reduction in titer phage (ca. 10(8) pfu/mL) without affecting the viability of L. monocytogenes cells. Artificially inoculated skimmed milk revealed mean populations of the bacteria as low as between 13 cfu/mL (1.11 log cfu/mL), after a 10-h assay duration. ABSTRACT The ability of pathogens to survive cheese ripening is a food-security concern. Therefore, this study aimed to evaluate the performance of two alternative methods of analysis of Listeria during the ripening of artisanal Minas cheese. These methods were tested and compared with the conventional method: Lateral Flow System™, in cheeses produced on laboratory scale using raw milk collected from different farms and inoculated with Listeria innocua; and VIDAS®-LMO, in cheese samples collected from different manufacturers in Serro, Minas Gerais, Brazil. This study assessed biofilm formation on polystyrene by Staphylococcus aureus, Listeria monocytogenes, L. welshimeri and Escherichia coli, isolated from a slaughtering plant, grown on tryptic soy broth (TSB) using different glucose concentrations. The tested bacteria produced biofilm in at least one of the concentrations used, and some of them were strong biofilm producers.

Detection of Listeria species in refrigerated chicken carcasses using Clearview tm and a modified conventional culture method BJM

The occurence of Listeria species in refrigerated chicken carcasses was evaluated, comparing the conventional culture methodology of FDA, modified by the introduction of a secondary enrichment step prior plating, and the ClearviewTM rapid method (Oxoid, UK Ltd). Forty-eight refrigerated whole chicken carcasses purchased from supermarkets in Florianópolis, SC, Brazil, were analysed. Listeria species occured in 21 (43.7%) samples. Using the Clearview method, 17 (35.4%) samples were positive for Listeria species. Of these isolates, 11 (23%) were L. monocytogenes, 4 (8.3%) L. innocua, 1 (2.1%) L. welshimeri and 1 (2.1%) L. seeligeri. Présence du genre Listeria dans les coquillages issus de zones conchylicoles du Finistère ArchiMer

Cette étude a porté sur la recherche des bactéries appartenant au genre Listeria (Listeria spp.) dans 61 échantillons de coquillages issus de quelques zones de production situées dans le département du Finistère. Ces investigations, effectuées au cours de deux périodes (janvier-février et juillet -août 1994), ont mis en évidence la présence régulière des Listeria dans les bivalves (L. spp.= 49.2% ), la part non négligeable de Listeria monocytogenes (L.m. = 11.5%), la multiplicité d'espèces sur quelques échantillons testés (Baie de Morlaix) ainsi qu'une large distribution de ce genre bactérien. The interest of biopreservation using lactic bacteria to improve the food security of smoked salmon was evaluated. Cold smoked salmon is a non-stable microbiological product whose physicochemical characteristics allow the development of Listeria monocytogenes which constitutes the major microbiological risk depending on the consumption of this product. Biodiversity of the microflora of smoked salmon and its evolution during conservation, the origin of the contamination by Listeria and its consequences, and the parameters of the manufacturing process allowing a better control of microbiological quality are discussed. Occurrence of Listeria monocytogenes in salami Rev. Microbiol.

Eighty-one samples of four different types of salami (Friolan, Hamburguese, Italian and Milanese), belonging to five brands, and purchased at Rio de Janeiro market, were evaluated for the occurrence of Listeria monocytogenes. The pathogen was detected in 13.3% of Italian type samples of salami, while L. innocua occurred in 6.5% of the Italian type and in 16.6% of the Milanese type. The remaining samples were negative for Listeria spp.
