The Effect of Retail Grocery Coupons for Breakfast Cereals on Household Purchasing Behavior 31

We examine the affect of retail and manufacturer coupons on the nutritional quality of breakfast cereal purchases made by households. Using household level purchase data we find that coupon usage has a significant impact on the nutritional quality of cereals purchased by households. Specifically, we find that the average sugar content decreases and the fiber content increases. This suggests that coupons have a positive impact on the nutritional quality of cereals purchased by households, holding all other factors constant. Given the prolific use of coupons by households and the fact that they offer both a price discount and an advertisement for products, they might be an effective way to help guide consumers to healthier food choices.

Avian Influenza Threat and its Potential Impact on Demand for Chicken and Eggs 31

A highly pathogenic H5N1 strain of avian influenza (AI) has been confirmed in 420 human cases and has caused 257 deaths in the world starting from 2003. Using face-to-face interviews, our data were collected by utilizing a stratified sampling scheme following the distribution of gender and age in three major metropolitan areas in Taiwan, including Taipei, Taichung, and Kaohsiung. The questionnaire was designed to retrieve information including AI knowledge, risk perceptions, and behavioral changes of two types of consumers, primary shoppers and general consumers. Measuring Retail Service Quality in Farm Supply Cooperatives 31

Based on the Retail Service Quality Scale (RSQS), we develop a tool for mangers of local farm cooperative stores to assess which customer service groups matter to their customers. Principal component analysis (PCA) reveals three customer groups. The results of the multinomial logit model showed younger patrons and homeowners are likely to deem customer service and personal interaction as important. Customers, who consider appearance and accessibility as important, are college graduates and persons dependent on farming. Older patrons and wildlife enthusiasts are likely to view the policies and reliability as important factors of service quality.

THE INFLUENCES OF AVIAN INFLUENZA, BSE, AND H1N1 INFLUENZA ON ATTITUDINAL CHANGES IN MEAT SAFETY ISSUES 31

Consumption patterns for chicken and eggs have changed since the outbreak of the H5N1 avian influenza (AI) throughout the world, but its potential impact on demand has not been thoroughly unveiled. Our study examines some important factors influencing behavioral changes and estimates their marginal effects by employing the censored regression model to survey data in Taiwan. Results showed that risk perceptions, overall knowledge and some socio-demographic characteristics were profound in determining changes in consumption of chicken and eggs. In this research, we analyze the importance of the extrinsic attributes in the customer's choice of the white asparagus category, paying special attention on the influence of the origin and in the asparagus designation of origin from Navarra. For this, an experiment was designed which included 18 choice screen's with choices made with combinations of the attributes. The results are analyzed according to a logit multinomial model which allows evaluating the importance of the attributes.
