It is possible to consider the production chain as a highly complicated system, within the framework of which different links and mutual relations function. Therefore it is necessary to analyze the complexity of the production chain functioning for the purpose of enhanced knowledge on the existence and the regularities functioning among different production elements. Impact of Sanitary and Technical Measures on Brazilian Exports of Poultry Meat AgEcon

The major objective of this work is to evaluate the effects of technical and sanitary measures introduced by the main world importers upon Brazilian poultry meat in the international market. The impact of the measures is estimated using a gravity model constructed with disaggregated data about bilateral poultry meat between Brazil and its major trade partners for the period from 1996 to 2009. The gravity model is estimated with a fixed effects model and the results indicate that the impact of TBT and SPS measures upon Brazilian poultry meat exports is ambiguous. Antimicrobial Susceptibility and Biofilm Production by Salmonella sp. Strains Isolated from Frozen Poultry Carcasses Rev. Bras. Ciênc. Avic.

ABSTRACT The objectives of this study were to evaluate the antimicrobial resistance and the biofilm-producing ability of Salmonella sp. strains isolated from frozen poultry carcasses. Antimicrobial susceptibility was tested by the disk-diffusion method. Biofilm-producing ability was determined in 96-well polystyrene microplates stained with crystal violet at 1%. Out of the 22 strains tested, all were multiresistant, that is, resistant to more than three antimicrobial classes, and 72.7% were able to form biofilms. The highest resistance rates obtained were against sulfonamides, tetracycline, and quinolones. On the other hand, 100% of the strains were sensitive to chloramphenicol. ABSTRACT The present study investigated the effectiveness of a single Salmonella prevention and control program applied in two different processing plants, located in the states of Mato Grosso do Sul (plant A) and Santa Catarina (Plant B), belonging to the same company, and identified Salmonella strain subtypes isolated from broilers, carcasses before and after chilling, and frozen chicken breasts. At the end of the laying cycle, layer hens can be used for production of mechanically separated meat (MSML) for sausage manufacture. However, mechanically separated meats are susceptible to lipid and pigment oxidation during storage, problems that could be prevented by the use of antioxidants present in curing additives traditionally used in meat processing. The aim of this study was the detection of Campylobacter sp. in raw chicken sausages using the methods ISO 10272-1 and ISO 10272-2. The overall prevalence of Campylobacter sp. in the samples tested was 16.67%, representing a serious risk to the health of consumers, particularly if measures guaranteeing proper cooking of foods and prevention of cross-contamination are not adopted. Furthermore, the majority of campylobacteriosis cases in humans are caused by consumption or improper handling of contaminated raw or undercooked poultry meat, which constitute the main vehicle of this infection.
