The world dairy industry is one of the most heavily protected in the agri-food sector. Exports of dairy products are dominated by the EU, the United States, New Zealand, and Australia. The major importers of dairy products are far less concentrated but include the EU, Japan, Mexico, Russia, the United States, and many others. As a result of economies of size, food processors are generally large and few in number. These characteristics put processors at a bargaining advantage over independent farmers. Marketing cooperatives were established to counter the uneven bargaining position of individual farmers. This article investigates the relative bargaining strength of one milk marketing cooperative and several fluid milk processors. The Nash bargaining model can be used to analyze the negotiated price in the Florida fluid milk market which acts like a bilateral monopoly. In this study, the strategic impacts of input-output price relationships on end-users' demands for futures and/or options are analyzed. An analytical model is developed based on mean-variance utility and extended to account for the impact of output prices and the inclusion of both futures and/or call options in the portfolio. This study makes several contributions to the literature on risk management in agriculture. First, its focus is on end-users and captures their unique characteristics.
