Proteoglycans (PGs) from the arterial extracellular matrix (ECM) contribute to the trapping of LDL and oxidized LDL (Ox-LDL) in the arterial wall, a phenomenon called "lipoprotein retention". Moreover, we have shown that subsequent to their binding to the matrix, LDL and Ox-LDL are taken up by macrophages. Oxidative stress significantly increases macrophage secretion of ECM-PGs, lipoprotein binding to the ECM and the uptake of ECM-retained lipoproteins by macrophages. Bioactive amines in Brazilian wines: types, levels and correlation with physico-chemical parameters BABT

The levels of ten bioactive amines and the physico-chemical characteristics of Cabernet Sauvignon, Cabernet Franc and Merlot wines from Bento Gonçalves, RS, Brazil, vintage of 1999 were investigated. The physico-chemical characteristics varied significantly: pH from 3.80 to 4.07, total acidity from 67.7 to 85.3 meq/L, alcohol content from 11.45 to 12.46 mL/100 mL and total SO2 from 9.6 to 102 mg/L. Six amines were detected in every sample - spermidine, putrescine, histamine, tyramine, serotonine and phenylethylamine. Total amine levels ranged from 2.03 to 7.60 mg/L. Influence of the use of selected and non-selected yeasts in red wine production BABT

The aim of this work was to study the influence of use of Saccharomyces cerevisiae selected varieties in the elaboration of Terci red wine from Colombo. The winemaking method followed the classic red wine vinification system and the samples were analyzed according to the official table wine methods. The assays performed showed differences mainly over volatile acids, acetaldehyde, esters and methanol contents, confirming that the use of selected yeasts contributed on improving the wine quality.

Observational studies suggest there are clinical benefits to moderate red wine (RW) consumption. However, the effects on coronary vasculature and overall lifestyle are unclear. We investigated whether a lifestyle of regular long-term RW consumption is associated with changes in coronary plaque burden, calcium score, carotid intima/media thickness, endothelial function, and metabolic variables, compared with alcohol abstinence. Coronary artery calcification (CAC) is associated with atherosclerotic complications. However, elevated CAC may not always imply a worse prognosis. Herein, we report the clinical evolution of long-term red wine (RW) drinkers in relation to CAC. We followed 200 healthy male habitual RW drinkers and compared them to 154 abstainers for a period of 5.5 years. Ochratoxin A in wines and grape juices commercialized in the city of São Paulo, Brazil BJM

During the summer of 2005, a total of 101 samples of wines and grape juices purchased from supermarkets and retail stores in São Paulo city were analysed for the presence of Ochratoxin A (OTA). OTA was evaluated in 29 red wines and 38 grape juices produced in Brazil and in 34 imported red wines (from Argentina, Chile, Uruguay, France, Italy, Portugal, Spain and South Africa). OTA was extracted in an immunoaffinity column and detected by HPLC with fluorescence detection, according to EN 14133/2003. The detection and quantification limits established were 0.01 and 0.03 ng/mL, respectively. What consumers taste in wine is the culmination of management practices from the vineyard to the glass. As researchers, in order to have control over the composition of wine at the time of consumption, it is important to understand how production practices affect wine chemistry. Because phenolic compounds are so important to the overall quality of wine, they are the subject of intense investigation throughout the world. This review is a summary of current knowledge and some recent findings that have taken place in this area.
