Seasonal variation of physical, chemical and sensory characteristics of sea bream (Sparus aurata) reared under intensive conditions in Southern Europe ArchiMer

This study describes the variability of important quality traits in gilthead sea bream produced under intensive conditions in Southern Europe and purchased in a French market (Nantes). Chemical, sensory and histological characteristics were performed on 18 samples delivered over a year. All fish presented far lower dioxin and DL-PCBs or heavy metals concentrations than the maximum limit level set by EC Regulation, being totally safe for human consumption. Fat content and nutritional values reflected by n-3 and n-6 polyunsaturated fatty acids (PUFA) levels were parameters with high variability according to the season or the fish farm. This study aimed to analyse the quality of the sea water flowing into the marine farm of Douhet, a gilthead bream hatchery, from the marsh-seawater reservoir to the entrance of the hatchery. The basin-seawater reservoir is not stratified in the pumping area. As a consequence, the measurements carried out at the surface to the right of the pumping dock give a good evaluation of the quality of the seawater pumped in depth. The high sensitivity of gilthead bream larvae to the water PH during the first two weeks of their larval life, and the values measured in the circuit seem to be an explanatory parameter to the observed mortalities. The effect of nucleic acids on growth, ureagenesis and nitrogen excretion of gilthead sea bream Sparus aurata juveniles ArchiMer

The aim of this trial was to evaluate the effect of dietary nucleic acids on ureagenesis and nitrogen balance in gilthead sea bream juveniles. For that purpose, 5 isonitrogenous (7.25% N) diets were formulated based on fish meal as protein source (FM-control diet) and to partially replace the fish meal nitrogen with two levels of nucleic acids (diets RNA1 and RNA2) or brewers yeast (diets BY1 and BY2). Each diet was fed for 10 weeks, to apparent visual satiety, to triplicate groups of 50 fish each with an average body weight of 12.7 g. Inclusion of nucleic acid N either as brewers yeast or RNA led to significant improvement of feed intake and growth, except for fish fed diet RNA2. Natural abundance of N-15 and C-13 in fish tissues and the use of stable isotopes as dietary protein tracers in rainbow trout and gilthead sea bream ArchiMer

For developing efficient diets, two sets of experiments examined whether the use and allocation of dietary protein can be traced by labelling with stable isotopes (N-15 and C-13) in two culture fish (Oncorhynchus mykiss and Sparus aurata). In the first experiment, natural abundance and tissue distribution of these isotopes were determined, by measuring the delta C-13 and delta N-15 values by isotopic ratio mass spectrometry, in fingerlings (14-17 g) adapted to diets differing in the percentage of fish meal replacement by plant protein sources. For both species, delta N-15 and delta C-13 were greater in tissues with higher protein and lower lipid content. In a general context of low progression, European aquaculture has been characterized by the development of intensive fish farming. The most notable fact is the recent increase in intensive salmonid farming, with a turnover of almost two million ECU. More recently, the intensive farming of sea bass and sea bream has increased very rapidly in the Mediterranean Basin, although on a more reduced extent.
