Food allergy is most frequently the result of IgE-mediated hypersensitivity reactions. Here, we describe a chronic model in which some of the intestinal and systemic consequences of continuous egg white solution ingestion by ovalbumin-sensitized eight-week-old BALB/c mice, 6 animals per group, of both sexes, were investigated. There was a 20% loss of body weight that began one week after antigen exposure and persisted throughout the experiment (3 weeks). The sensitization procedure induced the production of anti-ovalbumin IgG1 and IgE, which were enhanced by oral antigen exposure (129% for IgG1 and 164% for IgE, compared to sensitization values). Food allergy is an adverse reaction that occurs in susceptible people when they eat sensitizing foods and is one of the causes of Inflammatory Bowel Disease (IBD). The effort to understand the induction process of these diseases is important as IBD is increasing worldwide, including in Brazil. The aim of this study was to develop an experimental antigen specific inflammatory process of the gut of mice and rats, using peanut seeds. Animals were immunized with peanut protein extract before their exposure to the in natura peanut seeds. Cutaneous food allergy is an adverse immunological response, triggered by antigenic dietary components that may escape the digestion process and are absorbed intact through the gastrointestinal mucosa. In Brazil, there are only a few reports on cutaneous food allergy and antigenicity of food components used in pet food production. Thus, the aim of this report was to assess and describe data from medical records of canine patients diagnosed with cutaneous food allergy at a Veterinary Teaching Hospital from Jaboticabal, SP, Brazil, in order to evaluate epidemiological and clinical aspects related to this skin problem.
