A colony blot hybridization method with a digoxigenin-(DIG)labelled nucleotide probe was developed to enable Campylobacter jejuni species-specific identification of colonies present in minority. C. jejuni is the dominant cause of human cases of Campylobacteriosis. In contrast, C. coli is normally dominant in conventional pigs but it can be speculated that outdoor pigs host more C. jejuni due to a closer contact to the environment and wild-life where C. jejuni is pre-dominant. PURPOSE. Consumption of undercooked pork meat products has been considered a major risk factor for contracting toxoplasmosis in humans. Indoor farming and improved hygiene have drastically reduced Toxoplasma infections in pigs over the past decades. In organic livestock production systems, farm-management factors are thought to play an important role in the on-farm prevalence of Toxoplasma gondii. Serological results and the results of an HACCP analysis were combined to determine important risk factors for the prevalence of this protozoan parasite. Mathematical analysis demonstrated that feeding goat whey to pigs and the presence of a high number of cats were positively correlated to T. gondii seroprevalence in pigs. Not covering roughage and the farmers' assumption that pigs can come into contact with cat feces also showed a positive relationship. There is only limited data available on the prevalence of zoonotic bacteria like Salmonella and Campylobacter specifically in organic pigs, but the increased exposure to these pathogens in the outdoor environment may influence the food safety of organic pork. The occurrence and species distribution of thermophilic Campylobacter was investigated in organic outdoor pigs. An increased exposure of outdoor pigs to C. jejuni from the environment may cause a shift from a normal dominance of C. coli to more C. jejuni, which may imply a concern of reduced food safety. The prevalence of faecal Salmonella shedding has been compared in organic, conventional outdoor, and indoor finishing pig herds in a Danish survey with participation of 34 herds. Individual faecal and meat juice samples were collected from 30-50 pigs per herd and analysed for presence of Salmonella, and Salmonella antibodies, respectively. The results showed a low level of on-farm Salmonella shedding (<0,2 %) in organic and conventional outdoor herds compared to 2,5 % in indoor pigs (P<0,0001), and also a lower prevalence of Salmonella shedding in outdoor systems at slaughter (<2 %) compared to 4,1 % in indoor systems (P<0,01). Can the restricted use of antibiotics in organic pig farming be documented to provide a safer, high quality meat product with less antibiotic resistant bacteria? The project SafeOrganic aims to document that the restricted use of antimicrobials in organic pig production leads to lower levels of antibiotic resistant bacteria compared with the level in conventional pigs. However, the project will also address the risk of losing this quality parameter, due to a widespread practice of slaughtering organic pigs together with conventional pigs,implying a risk of cross-contamination. |

Carcass, meat, and fat quality were evaluated of 37 castrates of 4 different genotypes [Pi*Du*GLR (10), Pi*AS (7), Du (10), Du*GLR (10)] kept on grass clover and fed with coarse meal made up of farm grown cereal and grain legumes without optimising the amount of amino acids and their relation to the energy content. It was investigated how organic rearing conditions influence the Salmonella enterica infection dynamics in pigs and whether Salmonella persists in the paddock environment. Pigs inoculated with S. enterica serovar Typhimurium were grouped with Salmonella-negative tracer pigs. Bacteriological and serological testing indicated that organic pigs were susceptible to Salmonella infections, as 26 of 46 (56%) tracer pigs turned culture positive. For organic pig production little information is available about potential food safety problems with respect to zoonotic bacteria like salmonella. The aim of the current study was to examine the salmonella infection dynamics in organic pigs through an outdoor experimental set-up. Pigs inoculated with Salmonella Typhimurium were grouped with non-infected tracerpigs to determine the transmission of salmonella between animals. Can lower AR levels be claimed as a particular quality of organic pork due to the restrictions on antibiotic usage?
