Milk calcium concentration is a factor related to cheese texture, an important rheological property of cheese quality as perceived by consumers. This study aimed to evaluate the effect of different pH conditions (5.8 and 6.6) and calcium addition (0, 150, 300 ppm of CaCl2), on yield and nutrient retention of the clots obtained and on the texture of Minascured cheese. Clots were analyzed for wet and dry yield, percentage content and retention of protein, fat and calcium. The texture of the cheese was evaluated by instrumental and sensorial tests. Abstract The study was carried out with the objective of evaluating the influence of pre-slaughter stress on meat quality of Nile tilapia (O. niloticus) for 10 days of storage in ice. 75 whole fish were used eviscerated, with average weight and length of 825.75 ± 101.59 g and 28.25 ± 0.81 cm, respectively. The treatments consisted of time in which the animals underwent pre-slaughter hypoxia, being 0, 3 and 6 minutes. Rigor mortis and muscle pH were assessed besides the application of the Quality Index Method and analysis of total protein and blood glucose. ABSTRACT A prolonged period without feed access negatively impacts the growth and development of poultry. This study evaluated the effect of early post-hatch feeding times on the growth and carcass performance of Mule ducks reared intensively in the tropics. A total of 48 Mule ducklings were obtained from a local hatchery and assigned in a completely randomized design to 4 treatments based on 4 feeding regimes, (T) as follows: T1 3hrs, T2 24hrs, T3 36hrs and T4 48hrs post-hatch. Effect of ecological factors on germination of horse purslane (Trianthema portulacastrum) Planta Daninha

Trianthema portulacastrum is a very problematic summer crop weed and a complete crop failure has been observed because of this weed at high density. The effect of different ecological factors on germination of T. portulacastrum seeds collected in two different years (2009 and 2005) was studied in laboratory experiments. An increase in temperature from 25 to 35 ºC increased germination percentage of T. portulacastrum from 65 to 85%, after which germination started to decrease, reducing to 71.25% at 45 ºC. Trianthema portulacastrum had maximum germination with distilled water compared with different salt solutions and drought stress levels. The objective of this study was to evaluate the consequences of low or high stress during pre-slaughter handling of pigs on their carcass and meat quality. Forty-four animals of a commercial lineage, with an average weight of 107.23±5.23 kg, were used. At lairage the animals were randomly divided into two groups, the least and the most stressed. At slaughter, during bleeding, blood samples were collected for later cortisol and lactate tests. Abstract The aim of this study was a contribution to standardazation the process of making mozzarella cheese from goat milk by draining at different pH values 5.0 (MC50), 5.3 (MC53) and 5.6 (MC56), so as to obtain a product with suitable physicochemical, microstructural and textural characteristics. MC50 had lower protein and calcium, with very few strands. MC53 had adequate moisture content, fat, protein and calcium. The cheese yield was higher, the hardness parameters were lower, and the microstructure revealed the presence of long, thin strands, giving it the distinctive texture for this type of cheese. The aim of this study was to evaluate the effects of pH, dextrose and yeast extract on the cadmium toxicity on Saccharomyces cerevisiae PE-2. In the first assay, the YED mediums with different pH (2, 3, 4, 5, 6, 7, and 8) containing 0.0 and 0.05 mmol Cd L-1 were inoculated with yeast suspension and incubated at 30 °C for 18 hours. During the anaerobic growth, the biomass concentration was determined. ABSTRACT This study investigated the effect of transformed Lactobacillys reuteri on intestinal pH and morphology, carcass characteristics, meat quality, and serum biochemical indexes of broiler chickens. A total of 480 broilers were assigned to six treatment groups and fed a phosphorus-adequate diet, a phosphorus-deficient diet, or a phosphorus-deficient diet containing different L. reuteri recombinants. The results showed that transformed L. reuteri decreased the pH in the duodenum and jejunum of chickens at day 21, decreased drip loss and cooking loss of muscles, and improved muscle tenderness of chickens at days 21 and 42, but did not affect carcass characteristics and only slightly decreased abdominal fat. Mammee apple (Mammea americana L.) fruits are promising sources of various bioactive compounds such as carotenoids, vitamin C, and phenolic compounds, and offer great potential for use in agro-industrial processing and to meet the requirements desired for consumer health. The objective of this study was to evaluate physicochemical and sensory changes of mammee apple after syrup and jam processing. Fruits were washed, cut, pulped, blanched, and the pieces of fruit blanching were stored in 125 mL glass jars, and covered with 18 °Brix boiling sugar syrup. The mixture was pasteurized and cooled. Can vinasse accelerate the change of minerals in rock dust to obtain fertilizers, using residues from alcohol agro-industries and mining? Answering this question was the main objective of this study. Therefore, an experiment was set up in the laboratory in a completely randomized design using Polyvinyl Chloride (PVC) columns, in which the 0-50 cm layers of a clayey soil (eutroferric Red Oxisol) and sandy soil (Typic Quartzipsamment) were reproduced. Effect of simulated acid rain on the survival, mortality, behaviour and morphology of African mud catfish Clarias gariepinus (Burchell, 1822) Animal Sciences

This study simulated acidic habitat for different life stages of Clarias gariepinus to know the effect on survival, mortality, morphology and behaviour. The fish were exposed to pHs 3, 4, 5, 6 and 8.01 (control) for 35 days. 100% mortality was recorded for all the life stages in pH 3, and 80, 62 and 36% of mortality of fingerlings, juveniles and adults respectively were recorded in pH 4. In pH 5, 30, 26 and 12% mortalities of fingerlings, juveniles and adults respectively were recorded and at pH 6 mortalities of fingerlings, juveniles and adults were 12, 10 and 4% respectively. Effect of some environmental factors on seed germination of Eryngium caeruleum M. Bieb. populations Acta Botanica

ABSTRACT The effects of alternating and constant temperatures and light regimes, osmotic and salt stress and pH were tested on seed germination in four populations of Eryngium caeruleum. Laboratory experiments revealed that the four populations exhibited different responses to alternating temperature and light conditions. Alternating temperature and photoperiod had a greater positive effect on seed germination compared to complete darkness. The optimal constant temperature within 10 ºC to 15 ºC for seed germination of each population was determined in a light/dark photoperiod. Abstract Citrox has natural antibacterial effect against many foodborne pathogens and contaminated bacteria. It mainly contains citric acid, ascorbic acid, and malic acid. We studied the antimicrobial effects of citrox solution (1% and 2%) on the total viable count of methicillin-resistant Staphylococcus aureus (MRSA) on chicken meat fillet. The samples were treated with 106 CFU/g of meat, vacuum-packed (VP), and 4 °C for 3, 6, 9, 12, 15, 18, 21 days. Diets formulated with protein sources presenting different resistance to ruminal degradation were compared by evaluating ruminal parameters, production and microbial efficiency and nutrients flow to the omasum in goats. Effects of dystocia on blood gas parameters, acid-base balance and serum lactate concentration in heavy draft newborn foals OAK

Dystocia is often lethal for neonatal foals; however, its clinicopathological features remain largely unknown. We investigated the effect of dystocia on the foal blood profile. Venous blood samples were collected from 35 foals (5 Percheron and 30 crossbreds between Percheron, Belgian, and Breton heavy draft horses) at 0 hr, 1 hr, 12 hr and 1 day after birth. Dystocia was defined as prolonged labor >30 min with strong fetal traction with or without fetal displacement.
