Milk calcium concentration is a factor related to cheese texture, an important rheological property of cheese quality as perceived by consumers. This study aimed to evaluate the effect of different pH conditions (5.8 and 6.6) and calcium addition (0, 150, 300 ppm of CaCl2), on yield and nutrient retention of the clots obtained and on the texture of Minascured cheese. Clots were analyzed for wet and dry yield, percentage content and retention of protein, fat and calcium. The texture of the cheese was evaluated by instrumental and sensorial tests. Abstract The study was carried out with the objective of evaluating the influence of pre-slaughter stress on meat quality of Nile tilapia (O. niloticus) for 10 days of storage in ice. 75 whole fish were used eviscerated, with average weight and length of 825.75 ± 101.59 g and 28.25 ± 0.81 cm, respectively. The treatments consisted of time in which the animals underwent pre-slaughter hypoxia, being 0, 3 and 6 minutes. Rigor mortis and muscle pH were assessed besides the application of the Quality Index Method and analysis of total protein and blood glucose. ABSTRACT A prolonged period without feed access negatively impacts the growth and development of poultry. This study evaluated the effect of early post-hatch feeding times on the growth and carcass performance of Mule ducks reared intensively in the tropics. A total of 48 Mule ducklings were obtained from a local hatchery and assigned in a completely randomized design to 4 treatments based on 4 feeding regimes, (T) as follows: T1 3hrs, T2 24hrs, T3 36hrs and T4 48hrs post-hatch. The objective of this study was to evaluate the consequences of low or high stress during pre-slaughter handling of pigs on their carcass and meat quality. Forty-four animals of a commercial lineage, with an average weight of 107.23±5.23 kg, were used. At lairage the animals were randomly divided into two groups, the least and the most stressed. At slaughter, during bleeding, blood samples were collected for later cortisol and lactate tests. Abstract The aim of this study was a contribution to standardazation the process of making mozzarella cheese from goat milk by draining at different pH values 5.0 (MC50), 5.3 (MC53) and 5.6 (MC56), so as to obtain a product with suitable physicochemical, microstructural and textural characteristics. MC50 had lower protein and calcium, with very few strands. MC53 had adequate moisture content, fat, protein and calcium. The cheese yield was higher, the hardness parameters were lower, and the microstructure revealed the presence of long, thin strands, giving it the distinctive texture for this type of cheese. The aim of this study was to evaluate the effects of pH, dextrose and yeast extract on the cadmium toxicity on Saccharomyces cerevisiae PE-2. In the first assay, the YED mediums with different pH (2, 3, 4, 5, 6, 7, and 8) containing 0.0 and 0.05 mmol Cd L-1 were inoculated with yeast suspension and incubated at 30 °C for 18 hours. ABSTRACT This study investigated the effect of transformed Lactobacillys reuteri on intestinal pH and morphology, carcass characteristics, meat quality, and serum biochemical indexes of broiler chickens. A total of 480 broilers were assigned to six treatment groups and fed a phosphorus-adequate diet, a phosphorus-deficient diet, or a phosphorus-deficient diet containing different L. reuteri recombinants. The objective of this study was to evaluate physicochemical and sensory changes of mammee apple after syrup and jam processing. This study simulated acidic habitat for different life stages of Clarias gariepinus to know the effect on survival, mortality, morphology and behaviour. The fish were exposed to pHs 3, 4, 5, 6 and 8.01 (control) for 35 days. 100% mortality was recorded for all the life stages in pH 3, and 80, 62 and 36% of mortality of fingerlings, juveniles and adults respectively were recorded in pH 4. Dystocia is often lethal for neonatal foals; however, its clinicopathological features remain largely unknown. We investigated the effect of dystocia on the foal blood profile. Venous blood samples were collected from 35 foals (5 Percheron and 30 crossbreds between Percheron, Belgian, and Breton heavy draft horses) at 0 hr, 1 hr, 12 hr and 1 day after birth. Dystocia was defined as prolonged labor >30 min with strong fetal traction with or without fetal displacement.
