Im Rahmen des Projekts wurden 15 Betriebsinhaber, die antibiotikafrei Milch produzieren besucht und zu ihren Managementmaßnahmen in der Tierhaltung befragt. Ziel war es, das Management von erfolgreichen Betrieben zu analysieren. Ziel des Projekts war es Faktoren und Maßnahmen, die einen Antibiotikaverzicht möglich machen zu erkennen, analysieren und anderen Landwirten verfügbar zu machen. Als relevante Faktoren für die Tiere zeigten sich eine bereits stabile Kälbergesundheit sowie das Ausschalten von Stressfaktoren, die die Gesundheit der Tiere beeinflussen. Hierfür sind teilweise auch stallbauliche Änderungen notwendig. Außerdem zeigte sich eine gute Mensch- Tier Beziehung von Vorteil. |

At the biodynamic farm Juchowo, 7 pairs of dairy cows from 2 breeds (Holstein (HF) and Brown Swiss (BS)) were milk sampled in summer and in winter. Cows are grazed in summer and fed hay in winter. Differences in the milk fatty acid profile were evaluated for effects of month (fodder), breed and individual cows. The most important way to improve the FA quality is through grazing of fresh grass. Therefor milk from grass based systems should be preferred. Overall breed effects were small, but there are still possibilities present to select individual cows to get an improved FA quality profile in terms of CLA, n-3 FA and delta-9-desaturase activity. |

In het verleden is al aangetoond dat de biologische productiemethode maatschappelijke voordelen heeft op terreinen als milieu, biodiversiteit, bodemkwaliteit, dierenwelzijn en pesticidenresidu. Indirect dragen deze kwaliteiten bij aan de gezondheid van de mens. Nu beginnen ook steeds meer onderzoeksresultaten beschikbaar te komen waaruit blijkt dat de biologische productiemethode ook leidt tot voedsel dat meer gezonde stoffen bevat. Organic livestock farming has its own concept of health and welfare. The approach to health can be characterised by the key words human, preventive, self-regulating and holistic (Chapter 1). On the Hessian state domain Frankenhausen near Kassel the project “The Integration of Nature Conservation into Organic Farming” (supported by the German Federal Agency for Nature Conservation with funds of the Federal Environmental Ministry) aims to support biodiversity not only by restoring biotopes on the farmland. The focus lies on measures to enhance the diversity on the arable land and the pastures of the farm. A participatory approach is striven for, in which the scientists and planners take the role of a companion catalyst or moderator. |

The spontaneous degradation of milk at 20oC was investigated within a Goetheanistic approach to determine the milk quality. Two opposite degradation processes were found. One extreme were milk samples that got sour within 1 1/2 day and showed no further changes. The pH was stable at about 4.0. Only a grey mould deck covered the cream at the top. This extreme was called the acid pole. On the other side, milk sam-ples remained fluid over 5-7 days period. Taste became even more intensive after day 2-3 (like roasted nuts). Fungi were flat growing and very colourful in red and yellow. Demeter Milch wird aufgrund ihrer Erzeugungsbedingungen gerne mit Gesundheit in Zusammenhang gedacht. Was sagt die Forschung dazu und welche Merkmale werden miteinbezogen? Mit welchen landwirtschaftlichen Maßnahmen ist das in Verbindung zu bringen? Sommermilch ist generell besser als Wintermilch aufgrund der Futterqualität bzw. dem Angebot an "frischem" Futter. Saison und Region beeinflussen die Qualität stark. Gebirgsregionen haben bessere Chancen für eine gute Milchqualität durch den ganztägigen Weidegang der Tiere und die hohe Wachstumsgeschwindigkeit der Vegetation. Das reiche Angebot grüner Pflanzen (Chlorophyll) und Kräuter führt zu hohen Gehalten an Alpha-Linolensäure in der Milch. |

In this paper the differentiation made within the concept of naturalness will be used to explain the different approaches in breeding within the organic movement. The differentiation of the concept will result into a framework, which will be used as a tool to describe and explain the elements of bio-dynamic animal breeding. Bio-dynamics is a practical result out of the anthroposophical worldview. Bio-dynamics developed its own way to judge about relationships in the physical world, used its own language to express the holistic approach in agriculture and focused on additional relationships within the world. |

The process of spontaneous degradation of milk at 20oC was compared with other analytical quality parameters in milk. Biodynamic milk showed a higher oxidation of the milk fat and a longer renneting time. Conventional milk often tasted better. There is a correlation between several hygienic parameters in milk (germ count, etc) and the quality of degradation. However, the total germ count could not explain all differences and the question was raised if biodynamic milk might have a better resistance to degradation due to a specific bacterial flora or other defence mechanisms in the bio-dynamic milk. |

Several recent studies on the results of organic dairy farmers show that this system is not always better than conventional (Brinkman and Winkler, 2006). Various recent studies have indicated positive interactions between organic animal production and poly-unsaturated fatty acids, particularly CLA and omega-3. In this paper, we present the monitoring results of 15 organic farms concerning the rela-tionship between feeding practices and fatty acid pattern. The results indicate a strong negative effect of maize and grass silage and concentrate feeding on CLA levels in milk fat. On the other hand, feeding fresh grass has a positive effect.
