One of the fastest growing sectors in food service industries is that of frozen foods. Beside the volume, the effective management of interdependent operations regarding the production, storage, distribution and retailing of frozen foods ("the cold chain") is a key factor of success and a must for preserving the safety and quality of frozen foods. There are known that the functionalities of powdered natural ingredients from food products are strongly dependent on the chemical composition. The pre-treatment and type of drying can cause changes in amounts of nutritional compounds (vitamins, carotenoids, polyphenols) of fruits and vegetables. Therefore, this study investigates the effects of different drying treatments (hot air at 40 and 70 °C) on the carotenoid content of powders obtained from juice and blanched fresh organic tomatoes. |

The aim of this research was to observe and characterize the Romanian consumer perception and preference regarding the quality of organic products comparative with conventional ones. The questionnaire was composed from six questions regarding perception and preference about organic vs. conventional food production and nine questions with the specific scope to observe the socio-demographic profile of respondents. The size of the research was 93 respondents with ages from 18 to more than 65 years old and 64% of them were women, 36% men and the majority (82%) have completed tertiary education. Being a species appreciated in all parts of the world, the demand for salmon will always be high. Keeping frozen in the entire period of distribution and handling is a way to increase "shelf life". During cold storage, fish fat can be altered. The purpose of the paper is to determine the effect of cold preservation on the quality of salmon fat. These were evidenced by laboratory tests and by gas chromatography and mass spectrometry. It was analysed the samples of refrigerated and frozen fish (preserved at -20ºC, five days) from the same batch. Ascorbic acid or vitamin C is mostly found in natural products such as fruits and vegetables. Ultra performance liquid chromatography (UPLC) method has been developed to compare the ascorbic acid content in some fresh fruits (apple, orange) and vegetables (carrot, beet, cherry tomato) extracts with two different extraction solvents; i) 9% metaphosphoric acid, ii) 3% citric acid. The compound has been detected and quantified by the use of UPLC equipped with Photodiode Array (PDA) detector.
