Abstract: Biogenic amines (BAs) represent a considerable toxicological risk in some food and feed products. They are formed under unhygienic conditions during storage and processing; therefore, an increase in the concentrations of those metabolites is related to putrefaction. Because BAs are thermostable, they remain in food and feed that have undergone heat treatment. There are several toxicological effects, especially caused by histamine, when high concentrations of BAs are ingested by humans, depending on the food itself and also on individual susceptibility and individual health status. Um dos poluentes aéreos frequentemente encontrados em altas concentrações nos aviários é a amônia a qual é considerada o gás mais prejudicial na produção de aves. Dessa forma, objetivou-se avaliar a concentração de amônia no ar em aviário dark house. Os dados de concentração de amônia no ar foram coletados em 27 pontos no sentido longitudinal do aviário, à altura das aves, no primeiro e nos 21 e 42 dias de vida por seis lotes consecutivos. De acordo com os valores de amônia em cada ponto, foi realizada análise geostatística utilizando o software GS+􀂓. A partir da análise espacial foram confeccionados mapas de isolinhas das medidas de amônia utilizando o software SURFER􀂓. A distribuição de amônia foi heterogênea ao longo do aviário... |

Ractopamine (RCT) used as feed additive acts metabolically to decrease fat content contributing to a lean carcass. However, RCT is not broadly accepted worldwide but limited to stringent rules imposed by some countries. To assure human consumption safety, governments are encouraging research institutions to develop sensitive methods to accurately detect and quantify RCT. Yet, little is known about RCT concentration in raw materials such as meat and bone meal (MBM). The effectiveness of a previously developed method for RCT analysis was tested to determine sources of RCT contamination in MBM and discern from potential overestimation in feed. |

Abstract: This review presents up-to-date information about current research on nicarbazin, one of the most used anticoccidials in poultry production. The focus is to elucidate regulation concerning nicarbazin, limits for its residues in food, how maximum residue limits in different countries are calculated regarding edible chicken tissues and the possible implications in human health. Analytical methods to extract and quantify this residue, expressed as dinitrocarbanilide (DNC) are presented and discussed, including qualitative screening and quantitative/confirmatory analytical methods.
