Thrce ditferent methodologies frequently employed to evaluate the indexes that report the antioxidant capabilities of pure compounds and/or complex mixtures of antioxidants are applied to a series of mono- and polyphenols, as well as to two wine (red and white) samples. These methodologies are based on the bleaching of a stable radical, the effect of the additive upon luminol chemiluminescence induced by peroxyl radicals, and the effect of the additive upon the bleaching of the fluorescence from a dye molecule. En el presente trabajo se estudia la capacidad antioxidante de varios extractos, acuosos e hidro-alcohólicos obtenidos a partir de algas y plantas marinas de la plataforma insular cubana. A todos los extractos se les determinó su contenido de polifenoles, proteínas, lípidos y azúcares totales, así como la actividad Superóxido Dismutasa (SOD). Todos los extractos evaluados mostraron una buena actividad antioxidante, con una CE50 inferior de 0,4 mg.ml-1. El contenido de polifenoles en los extractos de Ulva fasciata es menor el de las otras especies, aunque tanto el extracto hidro-alcohólico como el del alga seca e irradiada de dicha especie presentan una buena actividad antioxidante. Abstract: Diphenyl diselenide (Ph2Se2) is an organic selenium compound that is known for its antioxidant characteristics. Thus, the aim of this study was to evaluate whether Ph2Se2 in quail (Coturnix japonica) diets influences the oxidative/antioxidant status and meat quality. Materials and methods. Four diets (0; 0.3; 0.6; 0.9 ppm Ph2Se2) were provided to 56 male quails (Coturnix japonica) distributed in a completely randomized design with 14 repetitions in order to check whether (PhSe)2 would change their blood and tissue oxidative/antioxidant status, which would lead to an improvement in the meat quality. The biological activity of ethyl acetate extract was tested against fungal and bacterial pathogens. The free radical scavenging potential of the crude extract was determined by DPPH assay. The aim of this study was to evaluate the therapeutic and toxicologic effects of the administration of the powered vegetable extract and aqueous extract of Tournefortia paniculata leaves on Wistar rats, subjected to a hypercaloric diet for 42 days. The rats were divided into five groups and were given the following treatments by gavage: T0 (control) - 1.0 mL water day-1; T1 - aqueous extract containing 14 mg phenolic compounds kg-1 rat day-1; T2 - 14 mg quercetin kg-1 rat day-1; T3 - 50 mg powered vegetable extract from T. paniculata leaves (PVE) kg-1 rat day-1 and T4 - 100 mg PVE kg-1 rat day-1. An experiment was conducted to evaluate the potential of honey, propolis, and bee pollen for the reversal of lipid peroxidation induced by tebuconazole (TEB) in South American catfish (Rhamdia quelen), in which the concentration of thiobarbituric acid reactive substances (TBARS), the activity of the antioxidant enzyme glutathione-S-transferase (GST) and the concentrations of non-enzymatic antioxidants, reduced glutathione (GSH), ascorbic acid, and non-protein thiols were assessed. To obtain the beverage, a Response Surface Methodology was used, with concentration of yacon extract (x1) and the sweetener (x2) added to a mixture of tropical fruits as independent variables, and the sensorial acceptance as response. The optimized beverage showed higher values for antioxidant capacity, measured by ABTS, FRAP and DPPH assays. Thus, the fructooligosaccharides content (2.32 ± 0.65 g FOS/100 g), total phenolic (126.83 ± 9.48 mg gallic acid equivalent/100 g) and ascorbic acid (171.64 ± 7.31 mg/100 g) shows that the beverage contains high levels of these bioactive compounds. In this work antioxidant films (AF) based on bacterial cellulose nanofibers (BCNF) and fish skin gelatin peptides (AFSGP) were developed. AFSGP addiction up to ~44% contributes to increase antioxidant activity (Aa) of BCNF films. The films containing AFSGP and sorbitol presented similar opacity compared to BCNF films without AFSGP. Considering the compact nanostructure, Aa, water vapour permeability and thermal stability, BCNF/AFSGP films can be used as bioactive food packing.

We evaluated the interaction between ascorbic acid (AA) and (+)-catechin (CTCH) in potassium phosphate solution, pH 7.4 (PPS) and in human plasma. In both systems, the oxidation was started by adding 2,2’-azobis-(2-amidinopropane) clorhidrate (AAPH). The concentrations of AA and CTCH were determined by HPLC using electrochemical detection. In PPS, CTCH was oxidized by AAPH (50 muM), in either the absence or presence of different initial concentrations of AA (25-200 muM). In the presence of AA, CTCH depletion was delayed, an effect that was dependent upon the initial concentration of AA. A uva é considerada uma matéria prima de grande relevância, pois, a partir do seu cultivo é possível à obtenção de diferentes produtos alimentícios processados. Porém, etapas utilizadas no processamento de frutas podem alterar a taxa de degradação de compostos nutricionais de interesse. O objetivo dessa pesquisa foi avaliar a manutenção de parâmetros de qualidade da uva passa ?BRS Vitória? submetida à pré-tratamento com hidróxido de sódio (NaOH), durante o armazenamento por até 120 dias. O pré-tratamento com NaOH é utilizado para induzir a rachadura da casca visando acelerar o processo de desidratação das bagas durante a produção de uva passa.
