Bio-Schulverpflegung in Italien, Finnland, Dänemark und Norwegen – Was kann Deutschland lernen? Organic Eprints

The policies and practice of school meal provision in Germany are currently in a dynamic transition led on by the introduction of a fulltime school system. One of the many issues being highlighted is its potential to increase the use of organic produce. The research project “innovative Public Organic food Procurement for Youth” (iPOPY; www.ipopy.coreportal.org) analyses the entire system. Results of the first comparison between Italy, Finland, Denmark, and Norway are presented here, as a background to discuss the German situation. Using a common guideline developed in iPOPY the types of school meal provision can be categorised as (a) warm lunch (IT, FI) or (b) fruit and milk subscription schemes to supplement a packed lunch (DK, NO). In order to evaluate the effects of short, compared to medium or long distribution chains, on some quality parameters of organically grown fresh tomatoes, a post-harvest experiment was carried out by reproducing in the lab the most common temperature, relative humidity conditions and storage-transport times occurring in the real distribution chain of organic horticultural fresh products. Effects of sampling and extraction on deoxynivalenol quantification Organic Eprints

Deoxynivalenol was extracted from wheat grain and quantified by GC-ECD. The quantification of deoxynivalenol can be critical, for example in certifying the amount of the mycotoxin in a lot and determining if this amount is over or under a fixed limit. Thus, an objective was to obtain representative samples to monitor DON quantification variability. We show that among the different steps of analysis the critical one is grain sampling. We also show that we were able to significantly improve the extraction rate without increasing the variability by using a longer extraction time with a magnetic agitator, and a grinding process which takes into account both the heterogeneous repartition of deoxynivalenol within wheat grains and different extraction rates...

Entwicklung eines stufenübergreifenden Qualitätssicherungssystems für die ökologische Ernährungswirtschaft unter besonderer Berücksichtigung der Kommunikations- und Organisationsstrukturen Organic Eprints

Im Rahmen des Projektes wurden Konzepte zur Lösung drängender Probleme im Bereich Qualitätssicherung in der Ökologischen Lebensmittelwirtschaft erarbeitet. Dazu wurden Strukturen geschaffen, die es erlaubten die Fachleute der Branche in die Problemanalyse und Lösungserarbeitung einzubeziehen. Durch die intensive Einbindung der Akteure konnte gewährleistet werden, dass die erarbeiteten Konzepte von hoher Relevanz für die Branche und direkt umsetzbar sind. Neben der Erarbeitung von Konzepten war deren Abstimmung mit Branchenvertretern und der Wissenstransfer der Ergebnisse ein Schwerpunkt des Projektes. Influence of dietary lipid and protein source on sensory quality of organic rainbow trout (Oncorhynchus mykiss) after ice storage Organic Eprints

The aim of this work was to study whether the type of protein and lipid source in feed for organic Rainbow trout (Onchorhynchus mykiss) influenced the sensory quality. The protein sources were fishmeal and a matrix of organic vegetable plant mealsproteins, while the lipid sources were fish oil and organic oils of linseed, sunflower, rapeseed and grape seed, respectively. Sensory profiling was performed after 3, 5, 7 and 14 days of storage in ice. Besides sensory analysis also lipid profiles weare measured. The resultsed showed that the lipid type in the feed aeffected the sensory characteristics after 3 days of storage. Especially the trout that had grape seed oil in the feed had a different sensory profile than the trout that had fish oil in the feed....

Organic smallholder women supplying the gastronomic sector in Cusco, Peru Organic Eprints

Aimed at promoting better conditions of food security, this practitioners’ paper describes the short-chain market integration of smallholder women supplying organic vegetables to the gastronomic sector in tourist destination Cusco (Peru), complementing PGS progress and local organic marketplace initiatives. Economic viability and bottlenecks along the value chain are analyzed as well as suggestions and challenges for sustainability presented.

Scientific evidence on how organic food and farming contributes to sustainable food security Organic Eprints

This briefing aims to summarise the most relevant recent scientific publications that critically assess the productivity and sustainability of organic farming methods. The rapid increase in the quantity of scientific literature on this topic reflects the growing importance of the sector as well as the need for accurate data and analysis to inform policy makers. There are currently 2.7 million organic-certified farmers (of which 350.000 are in Europe) who have committed to sustainable farming practices. Can organic food and farming be upscaled in order to contribute to sustainable food system and food security?

In 2002, the kitchen at St Olav´s Hospital joined the national pilot scheme ‘Organic food in hospitals´, run by the research institute Bioforsk. A hospital consumer survey revealed that people were not satisfied with the potatoes that were served at the hospital. We decided to investigate whether introducing organic potatoes could be a means to improve potato quality and patient satisfaction.
