This paper describes a cross- and transdisciplinary approach to develop a multicriteria assessment framework that aims to help organic actors and stakeholders conduct, document and communicate balanced overall assessments of the effects of organic food systems on society and nature. The framework will be based on extensive analyses of existing methods for multicriteria assessment and communication, and the adaptation and development of selected methods to suit organic food systems and the principles organic agriculture. The validity and utility of the framework is secured through involvement of actors and participatory testing of prototypes in practice. The goal is to help sustain an integrated development of the organic production, contribute to open and... |

Effects of extrusion parameters and raw materials on extrudate expansion are respectively investigated in a twin-screw extruder and a single-screw extruder extrusion cooking experiments for fish feed, wheat, and oat & wheat mixture processing. A new phenomenological model is proposed to correlated extrudate bulk density, extrusion parameters and raw material changes based on the experimental results. The average absolute deviation (AAD) of the correlation is 2.2% for fish feed extrusion in the twin-screw extrusion process. For the single-screw extrusion process, the correlation AAD is respectively 3.03%, 5.14% for wheat and oat & wheat mixture extrusion; and the correlation AAD is 6.6% for raw material change effects. The correlation results... |

In order to evaluate new strategies for the production of renewable energy within sustainable organic agriculture, a process-simulation model for a 100 ha organic farm was developed. Data used for the model was obtained from laboratory trials, literature data, consultancy with experts, and results from the BioConcens project (http://www.bioconcens.elr.dk). Different design approaches were evaluated in order to establish the most suitable configuration. Rye grains, clover grass silage, maize silage, whey and cattle manure were selected as raw materials for co-production of fuels, feed and fertilizer at the organic farm, based on the fact that crops grown in organic agriculture act as key carbon sources whereas manure and whey were applied primarily as the... |

In order to develop better and more sustainable food systems, we need to make, and use, overall assessments of their effects, based on multiple criteria. This is a complex and very difficult task. Two of the main challenges are 1) how to balance very different types of assessments and avoid bias in favour of accurate knowledge and that which is easy to measure, and 2) how to communicate complex overall assessments in such a way they can be used in practice by different actors and stakeholders with different perspectives and values. Description: Alternative, more sustainable food systems are developed in relation to a plurality of societal objectives and ethical guidelines, such as the organic principles. The success of these alternatives depends on... |

The present study aims at understanding some of the dynamics of social change that are underlying the present waves of interest related to the bathroom by taking a practice-oriented hold of ‘what is going on’ with the way bathrooms are used and arranged today in a specific Danish context. Through this approach, typical bathroom practices are laid out, hereby pointing out important contemporary aspects of the way bathrooms are used and arranged. Following this, dynamics connected to the shaping process of these practices are studied by analysing how practitioners and producers of bathrooms form part of this shaping process and how this is related to the overall development of the bathroom. |

Organic and low-input farming systems provide habitats for wildlife on farmland. The EU FP7 project BIOBIO has identified a core set of 23 indicators relating to the diversity of habitats, of species, of crops and of livestock. Management indicators capturing the pressure on biodiversity are also proposed. The indicators were identified in an iterative process between scientists and stake-holders to make sure that they are not only scientifically sound but also practicable and attractive. They were tested in 12 case study regions on four major farm types. Allocating 0.25 % of the CAP budget to a farm scale biodiversity monitoring would allow to measure and analyse the indicators on 50,000 farms across Europe. |

Organic agriculture is one sustainable alternative to avoid negative environmental effects often caused by conventional agriculture. The area for organic farming in Europe is increased rapidly in the last decades and Denmark is one of the top-ten countries in Europe as regards the organic share of the total cultivated area. The production of bioenergy from local biological resources and the maintenance of soil fertility seem to have been opposing aims in organic agriculture. In organic farming, there is a strong effort to reduce the reliance on fossil fuels and decrease greenhouse gas emissions in organic agriculture. Cheese whey is a by-product from the dairy industry, which has the highest market share of organic foods in Denmark. It generates... |

The consumer demand for environmentally friendly, chemical free and healthy products, as well as concern regarding industrial agriculture’s effect on the environment has led to a significant growth of organic farming. On the other hand, organic farmers are becoming interested in direct on‐farm energy production which would lead them to independency from fossil fuels and decrease the greenhouse gas emissions from the farm. In the presented work, the idea of biogas and bioenergy production at the organic farm is investigated. This thesis is devoted to evaluate such a possibility, starting from the characterization of raw materials, through optimizing new processes and solutions and finally evaluating the whole on‐farm biorefinery concept with the help of a... |

Energy production and energy use in organic agriculture (OA) need to be addressed in order to reduce the reliance on non-renewable fossil fuels and minimize greenhouse gas (GHG) emissions. Thus, there is an obligation to find consensus between the apparent opposing aims of renewable (bio) energy production and soil fertility in OA. This project aims at designing and evaluate a combined concept for biomass and bio-energy production in OA, while considering soil fertility. |

This study presents a new approach to model the biophysical potentials for increased biomass harvest in Denmark, and a multi-criteria sustainability assessment of the socio-economic and environmental effects of different scenarios for such increased production and new biobased economy in rural landscapes. Thereby the results serve as input to the ongoing productivism – post-productivism debate related to rural spaces in Europe. Empirical results from a case study of large scale conversion to biorefenery technologies, aiming to increase the total Danish harvest of biomass by 10 million tonnes via the conversion to new types of crop production and land management, is used as an example, and will be related to the common conceptual model presented by the... |

The addition of a biorefinery to an organic farm was investigated, where ethanol was produced from germinated rye grains and whey, and the effluent was separated into two streams: the protein-rich solid fraction, to be used as animal feed, and the liquid fraction, which can be co-digested with clover grass silage to produce biogas. A method for ethanol production from rye was applied by utilizing inherent amylase activity from germination of the seed. Biogas potential of ethanol fermentation effluent was measured through anaerobic digestion trials. The effluent from the trials was assumed to serve as natural fertilizer. A technoeconomic analysis was also performed; total capital investment was estimated to be approximately 4 M USD. Setting a methane... |
