Two wheat fertilization experiments were conducted during the 2005-2006 and 2007-2008 seasons using a medial, mesic, seric, Typic Placandept soil to determine the effect of sulfur on the yield, percentage of protein, gluten content, and sedimentation volume of the grain and the nutrient availability in the soil. During the 2005-06 season, the fertilization treatments consisted of a base fertilization plus various sulfur treatments: 0 kg S ha-1 (T1); 27 kg S ha-1 (T2); 54 kg S ha-1 (T3) or 108 kg S ha-1 (T4). During the 2007-08 season, the fertilization treatments were 0 kg S ha-1 (T1), 9 kg S ha-1 (T2), 18 kg S ha-1 and 36 kg S ha-1 (T4). Questions have emerged in the United States and Canada regarding the role and function of quality in international markets. One has been the definition and composition of different market segments, with a particular focus on higher quality customers. In this study, trends in U.S. wheat exports are analyzed by class, grade, protein, and market segment. Analysis shows trends toward increases in exports of higher grades of Hard Amber Durum (HAD) and Hard Red Spring (HRS); whereas, exports of higher quality grades for Hard Red Winter (HRW) appear to be moderate. The change in quality of wheat grains in terms of physical parameters (moisture, test weight, 1000 grain weight and insect damage), chemical parameters (protein, fat, ash and starch) and flour quality tests (falling number, water absorption, dough development time and dough stability) were observed during storage in conventional structures (earthen bin, metal bin, bulk covered and room store) for 12 months. In this report, important wheat quality attributes and their links to varietal differences are identified, and their technical and economic importance to the milling and baking industries is examined. Wheat class and grading systems used in the United States and other countries are described, and the relationships between wheat classes and wheat varieties and between physical and wholesomeness attributes and grades are identified. The per bushel prices received by farmers' for their wheat depend on the classes and grades of wheat they produce.
