ABSTRACT Dehydration of plant products extends its shelf life and reduces its mass and volume, which increases transport and storage efficiency and adds value to food. However, it is an intensive process in energy and time, making necessary the search for more efficient technologies, Thus, this study aimed to investigate the infrared ginger dehydration process by approaching the constant period of dehydration to the theory of mass and heat transfer process to the wet bulb thermometer and the decreasing period of dehydration to liquid diffusion theory. Introducción: el rizoma de Zingiber officinale Roscoe (jengibre) familia Zingiberaceae, presenta actividad antioxidante como atrapador de radicales libres y de protección en lipoperoxidación en modelos in vivo e in vitro, debido a sus principales compuestos bioactivos. Objetivo: evaluar el efecto del extracto hidroalcohólico obtenido de Zingiber officinalis en el modelo de hepatotoxicidad por sobredosis de acetaminofén en ratas. Métodos: se preparó un extracto hidroalcohólico del rizoma fresco de Zingiber officinalis. ABSTRACT This study was carried out to evaluate the effects of dietary essential oils of ginger (Zingiber officinale), black seed (Nigella sativa) and cone flower (Echinacea angustifolia) on the immune system of cultured rainbow trout, Oncorhynchus mykiss. A total of 360 fish were divided into 4 groups and 3 replicates each containing 30 fish. The fish were fed for 21 days with 1% of the herbal essential oils and with unsupplemented diet as the control group. Haematological and immune parameters including serum lysozyme, number of phagocytic bacteria, Hb, PCV, MCV, MCH, MCHC, number of RBC and WBC were studied. Abstract This work aims to produce and to characterize physical-chemically an added craft beer of ginger, as well as its sensorial attributes, due to the new demand for products with innovative flavors. The traditional method of production of beer craft type Pilsen was used, with addition of 2 g L-1 of ginger chips in the maturation stage. The final product presented alcoholic content of 3.40 °GL, primitive extract of 7.81 °P, real degree of fermentation of 68.71%, energy value of 115 KJ mL-1, bitterness of 21.5 B.U, pH of 4.46 and color of 7.13 E.B.C. Abstract: This study investigated the ability of formulation containing Zingiber officinale (ginger) to reverse health changes promoted by unhealthy diet in Wistar rats. Five compounds from the gingerol family and three from the shogaol family were identified in the chromatographic analyzes of the extract. The animals were fed a combination of unhealthy foods, the cafeteria diet, which promoted increases in body weight, hepatocyte nucleus area, total hepatocyte area and liver fat accumulation, as well as reduced hepatic glutathione S-transferase concentration, compared to the control group, which received commercial chow.
