Bertholletia excelsa Bonpl populaly known as Brazil nut, is considered one of the noblest species of the Amazon rainforest, being found throughout this territory. Its fruit represents a high economic value due to its use in both human and animal feeding, presenting about 60 to 70% of lipids, polyunsaturated fatty acids and 15 to 20% of protein. There are many uses of Brazil nuts, and the "milk" extracted from the nuts, is usually consumed pure and used by the natives as typical food. The traditional system of collection and storage of Brazil nut compromises seriously the quality of these almonds as it contributes to the high incidence of contaminants, like fungi of the genus Aspergillus, which can produce aflatoxins. Frequent nut intake is associated with protective effects against cardiovascular diseases. In addition to the generally high contents of unsaturated fatty acids, polyphenol compounds seem to be also implicated in health promoting effects of nuts due to their antioxidant properties. ABSTRACT Knowledge of the water sorption phenomenon in Brazil nut seeds will allow proper handling of this product, especially with regard to adequate conditions for safe storage. Thus, the present study aimed to determine the sorption isotherms (desorption and adsorption) of Brazil nuts, fitting different mathematical models to the experimental data, as well as to examine the hysteresis effect. PT-BR: A castanheira-do-brasil (Bertholletia excelsa Bonpl.) é nativa da Amazônia e importante espécie de exploração extrativista. O ambiente edáfico característico de áreas de ocorrência de concentração de populações naturais de castanheira-do-brasil, no norte de Mato Grosso foi avaliado. O estudo foi conduzido em quatro áreas de ocorrência de castanhais no norte de Mato Grosso, nos municípios de Itaúba, Alta Floresta, Juína e Cotriguaçu, nos quais se descreveu os perfis de solos, e dos quais foram feitas análises químicas, granulométricas e mineralógicas.
