The project SafeOrganic aims to document that the restricted use of antimicrobials in organic pig production leads to lower levels of antibiotic resistant bacteria compared with the level in conventional pigs. However, the project will also address the risk of losing this quality parameter, due to a widespread practice of slaughtering organic pigs together with conventional pigs, implying a risk of cross-contamination.

Studies on the antioxidative activity of red pigments in Italian-type dry-cured ham Organic Eprints

Aqueous phosphate buffer extracts and acetone/water extracts of pigments from Parma ham were assessed as antioxidants by (1) electron spin resonance spectroscopy using a spin probing technique to evaluate their efficiencies as scavengers of free radicals, and (2) by electrochemical measurement of oxygen depletion rate in an aqueous methyl linoleate emulsion to evaluate their efficiencies as chain-breaking antioxidant, and using both methods, compared with the effect of apomyoglobin and nitrosylmyoglobin. Lipophilic and hydrophilic extracts of the red pigments from Parma ham and nitrosylated pigment of dry-cured ham produced with nitrite salt were prepared with acetone/water (75/25 v/v %) solution and aqueous phosphate buffer, respectively. The spectral characteristics differed for both the lipophilic and the hydrophilic Parma ham pigment compared with the dry-cured ham produced with nitrite salt. Streichfähige Rohwürste (n = 80) und vorverpackte Aufschnitte erhitzter Fleischerzeugnisse (n = 108) aus ökologischer Produktion mit deutschlandweiter Vermarktung wurden auf produktrelevante Mikroorganismen untersucht. Die Ergebnisse zeigen bezüglich der Mikroflora keine auffallenden Unterschiede zwischen ökologisch und konventionell hergestellten Fleischerzeugnissen. Aus dem Verzicht auf Nitrit bei der Herstellung der Ökoprodukte ergab sich somit kein erkennbar höheres mikrobiologisches Risiko. In this video, Dario Paolo (CREA-IT) shows that small scale “industrially”processed food can have better sensory and nutritional quality compared to homemade products. Several technologies suitable for small-scale processors have been compared to standard homemade processing methods: • Strawberry jam produced under a vacuum had a higher nutritional value expressed by the ascorbic acid content. These vacuum jams also had more aroma and better flavour according to the amount of volatile compounds. • For apple juice, the traditional rack frame press and the“older”water press systems were compared. Die Backqualität von Bioweizen hat in der Vergangenheit zu teils kontroversen Diskussionen innerhalb der Getreidebranche geführt. Im Vordergrund steht dabei der Proteingehalt, der bei Bioweizen aufgrund des tieferen N-Düngungsniveaus generell tiefer ist als bei nicht biologisch angebautem Weizen. Jetzt hat sich die Branche auf ein neues Protein-Bezahlungsmodell geeinigt, das ab 2016 gilt. Vertreterinnen und Vertreter der Bioweizen-Wertschöpfungskette stellen im Film ihre Standpunkte dar. Dazu werden die Voraussetzungen und Massnahmen für einen erfolgreichen Anbau von Bioweizen gezeigt.

Hyperspectral imaging for the determination of potato slice moisture content and chromaticity during the convective hot air drying process Organic Eprints

Hyperspectral imaging (HSI) was utilised for the determination of moisture content of potato slices with three thicknesses (5 mm, 7 mm, 9 mm) at three drying temperatures (50 °C, 60 °C, 70 °C) during convective drying in a laboratory hot air dryer. Abstract Hops (Hurroulus kipulus L.) are basically used in beer production to impart bitterness, aroma, flavour and for microbial stability. The substances in the hop that possess these characteristics are mainly alpha-acid and hop oils. Alpha-acid is an important quality index which most buyers and farmers in the hop industry concentrate on. The organic acreage of soybeans in Germany is growing steadily the last five years. It is mainly used as protein feedstuff for poultry and pigs. To eleminate antinutrional factors in soybeans before feeding, a very energy intensive processing is required. The aim of the study was to find out if varieties with less trypsin inhibitor activity (TIA) require less energy input. For that a hydro-thermal soybean processing trial was conducted with a combination of autoclav and expander. Four soybean varieties varying in the TIA were used in 20 different process variations. The aim of this study is to compare the effects of some drying processes (hot-air drying and freeze drying) on total anthocyanin content (TAC) for organic raspberry (cv. Heritage) fruits as measured by spectrophotometric method and UPLC technique. The total anthocyanin content was determined in powders obtained from fruits and juice of organic raspberry dried in a hot-air dehydrator at 70 ºC and a freeze dryer at –55 ºC for 45 h. Qualitative analysis revealed the similar anthocyanin profiles in all raspberry powders and showed a clear anthocyanin pattern with the presence of two major compounds. Cruciferous oilseed crops accumulate relatively high concentrations of oil, proteins and dietary fibres (DF) in their seeds, in addition to bioactive components as glucosinolates and myrosinase isoenzymes (thioglucohydrolase; EC 3.2.1.147). When mixed in the presence of moisture, myrosinase isoenzymes and associated components transform glucosinolates into various types of products, which reduces the value of the extracted oil and the remaining seed components, as well as producing unwanted environmental effects due to smell and toxicity.
