Este estudo foi desnvolvido com o objetivo de verificar o comportamento das sementes de Ilex paraguariensis, submetidas a niveis crescentes de desidratacao e posterior avaliacao de viabilidade. Sementes de I. paraguariensis fora colhidas em Ivai, PR, em fevereiro de 1998. Em marco desse ano, as sementes foram acondicionadas em sacos de papel "kraft" e submetidas as condicoes de camara seca (14. C +- 1. C e 38% +- 3% UR), para secagem, por sete semanas, com avaliacoes semanais do teor de agua e da viabilidade pelo teste de tetrazolio. Parte das sementes provenientes de cada periodo de secagem foi estratificada em areia, em condicoes de casa de vegetacao, por 200 dias. This study analyzed the drying process and the seed quality of adzuki beans (Vigna angularis). Grains of adzuki beans, with moisture content of 1.14 (decimal dry basis) at harvest and dried until the moisture content of 0.11 (decimal dry basis.) were used. Drying was done in an experimental drier maintened at controlled temperatures of 30, 40, 50, 60, and 70 ºC and relative humidity of 52.0, 28.0, 19.1, 13.1, and 6.8%, respectively. Physiological and technological seed quality was evaluated using the germination test, Index of Germination Velocity (IGV), electrical conductivity, and water absorption, respectively. Maturity stage and drying method are the factors that most influence coffee seed quality. The objective of this study was to assess the physiological quality and investigate the electrophoretic patterns of catalase and endo-ß-mannanaseenzymes and heat resistant proteins in coffee seeds harvested at different phenological stages and dried under different conditions.
