Actividade antioxidante de azeitonas verdes descaroçadas produzidas em Trás-os-Montes: estudo do efeito da cultivar. IPB - Escola Superior Agrária

A azeitona de mesa e parte integrante da dieta Mediterrânica, sendo considerada uma fonte importante de antioxidantes. Em Trás-os-Montes, no inicio do Outono, são processadas de forma artesanal um tipo de azeitona de mesa denominada "alcaparras". Para 0 seu processamento, os frutos são colhidos verdes, partidos, retirado o caroço e introduzidos em agua, mudada diariamente, durante aproximadamente uma semana ate que possam ser consumidos. Bioactive properties and chemical composition of six walnut (Juglans regia L.) cultivars IPB - Escola Superior Agrária

The chemical composition, antioxidant potential and antimicrobial activity were studied in six walnuts (Juglans regia L.) cultivars (cv. Franquette, Lara, Marbot, Mayette, Mellanaise and Parisienne) produced in Portugal. Concerning their chemical composition the main constituent of fruits was fat ranging from 78.83% to 82.14%, being the nutritional value around 720 kcal per 100 g of fruits. Linoleic acid was the major fatty acid reaching the maximum value of 60.30% (cv. Lara) followed by oleic, linolenic and palmitic acids. Trás-os-Montes é uma das principais regiões produtoras de azeite a nível nacional, onde é produzido azeite com a Denominação de Origem Protegida “Azeite de Trás-os-Montes”. De uma forma geral, estes azeites resultam de uma mistura de diferentes cultivares, maioritariamente Cobrançosa, Madural e Verdeal Transmontana, sendo permitida a presença de outras, ainda que em menor proporção. Com o presente trabalho pretendeu-se contribuir para a caracterização química de azeites elementares produzidos na região de Trás-os-Montes. Olive oil is the principal lipid source of the Mediterranean countries being largely consumed in Portugal. In the last years, the olive oil sector showed a great dynamics and olive oils with Protected Designation of Origin (PDO) and varietal olive oils (olive oils from just one cultivar) are introduced in the market In this context, this work intends to contribute for a better knowledge of the most representative cultivars of Olea europaea L grown in Tnis-os-Montes and Beira Interior, regions with importance in the production of these products. 34 samples of olives belonging to 14 olive cultivars were analyzed.

Hazelnut (Corylus avellana L.) is a very popular dry fruit in the world being consumed in different form and presentations. In the present work, three hazelnut cultivars (cv. Daviana, Fertille de Coutard and M. Bollwiller) produced in Portugal, were characterized in respect to their chemical composition, antioxidant potential and antimicrobial activity. The samples were analysed for proximate constituents (moisture, fat, crude protein, ash), nutritional value and fatty acids profile by GC/FID. Cultivar effect on the phenolic composition and antioxidant potential of stoned table olives IPB - Escola Superior Agrária

Stoned green table olives ‘‘alcaparras’’ prepared from five different cultivars (Cv. Cobrançosa, Madural, Negrinha de Freixo, Santulhana and Verdeal Transmontana) were investigated concerning their phenolic composition and antioxidant potential. From each cultivar, five independent lots were prepared. The phenolic profile was determined by HPLC/DAD at 280 nm, and antioxidant potential measured using the reducing power and scavenging effect on DPPH (2,2-diphenyl-1-picrylhydrazyl) radicals assays. Twelve phenolic compounds were identified, being hyrdoxytyrosol the most abundant one, followed by verbascoside and tyrosol. Cv. Effect of solvent and extraction temperatures on the antioxidant potential of traditional stoned table olives “alcaparras” IPB - Escola Superior Agrária

This paper reports the first approach to the antioxidant potential evaluation of traditional stoned table olives ‘‘alcaparras’’. This kind of olives are largely produced and consumed in Trás-os-Montes region (Northeast of Portugal). Different solvents and temperature extraction conditions were employed in order to achieve the best method to obtain phenolic compounds and a higher antioxidant activity. The optimum method (water at boiling temperature) was applied on 10 samples from the traditional market. The total phenol content ranged between 5.58mg gallic acid equivalents (GAE)/g and 29.88mg GAE/g and effective concentration (EC50) values were in the range 0.36–1.64 and 0.34–1.72 mg/mL for reducing power and radical scavenging effect, respectively. As azeitonas verdes descaroçadas, regionalmente apelidadas de "alcaparras", são um tipo de azeitona de mesa produzido de forma tradicional e muito apreciadas em Trás-os-Montes. Inicialmente, a produção deste tipo de azeitonas era vista como um aproveitamento de frutos caídos da oliveira, sobretudo a partir de meados e finais de Setembro, situação alterada hoje em dia devido ao preço que este produto atinge. Na Elaboração deste tipo de azeitonas, os frutos são colhidos verdes, partidos, ocorrendo a separação do caroço e da polpa que fica quebrada em duas ou mais partes desiguais. GEROS-ISS (GEROS hereafter) stands for GNSS REflectometry, Radio Occultation and Scatterometry onboard the International Space Station. It is a scientific experiment, proposed to the European Space Agency (ESA) in 2011 for installation aboard the ISS. The main focus of GEROS is the dedicated use of signals from the currently available Global Navigation Satellite Systems (GNSS) for remote sensing of the System Earth with focus to Climate Change characterisation. The GEROS mission idea and the current status are briefly reviewed.

In the present work, we report the determination of phenolic compounds in ‘alcaparra’ table olives by reversed-phase HPLC/DAD, and the evaluation of their extract in vitro activity against several microorganisms that may be causal agents of human intestinal and respiratory tract infections, namely Gram positive (Bacillus cereus, Bacillus subtilis, and Staphylococcus aureus), Gram negative bacteria (Pseudomonas aeruginosa, Escherichia coli, and Klebsiella pneumoniae) and fungi (Candida albicans and Cryptococcus neoformans). The total phenols content and antioxidant and antimicrobial activities were studied in walnut (Juglans regia L.) green husks aqueous extracts of five different cultivars (Franquette, Mayette, Marbot, Mellanaise and Parisienne). Total phenols content was determined by colorimetric assay and their amount ranged from 32.61 mg/g of GAE (cv. Mellanaise) to 74.08 mg/g of GAE t (cv. Franquette). The antioxidant capacity of aqueous extracts was assessed through reducing power assay, scavenging effects on DPPH (2,2-diphenyl- 1-picrylhydrazyl) radicals and b-carotene linoleate model system.
