Abstract The objective of this study was to develop simple mathematical models for the prediction of the total anthocyanin content of fruits and vegetables, using colorimetry. Phenolic extracts of 13 species of fruits and vegetables were produced using 70% acidified ethanol and 70% ethanol. The quantification of the total anthocyanins of the extracts was performed by the spectrophotometric method, and the color characterization was done through the tristimulus colorimeter. The correlation between the L* value and the anthocyanin content was high (r = - 0.95) for extracts produced with 70% ethanol and diluted 20 times. Commercial cuts of Pantanal caiman meat according to sex Ciência Rural

ABSTRACT: This study evaluated the yield, color, and chemical composition of commercial cuts (tail, sirloin cut, back fillet, and thigh) of Pantanal caiman meat in both sexes. The yield of tail was higher than other cuts, and the yield of females (17.0%) was higher than males (15.9%). The thigh of males had lower protein content (20.8%) compared with other cuts. Females showed a higher lipid content in the tail (2.4%) and thigh (0.8%) compared with males (1.7% and 0.4%, respectively). The tail presented the greatest content of monounsaturated fatty acids (45.2%) and higher n6/n3 ratio (4.6). A desidratação é uma das técnicas tradicionais de conservação mais utilizadas para preservar os componentes nutricionais e as propriedades organolépticas dos alimentos. O mamão destaca-se por ser rico em açúcares e compostos bioativos, como os carotenoides e a vitamina C, além de possuir sabor e aroma agradáveis sendo, portanto, um fruto interessante para ser desidratado.

ABSTRACT: This study evaluated pre-slaughter stress and its influence on the stress indicators, quality characteristics and sensory characteristics of Nile tilapia fillets. To this end, two experiments were conducted: (1) two transportation times (60 and 240 min), with a density of 200 kg m−3, were compared to control treatment fish (in which the fish were removed from the net cage and immediately euthanized); and (2) two transportation densities (100 and 400 kg m−3), transported for 180 min, compared with control treatment fish. The action of essential oils in reducing soft rot in Chinese cabbage, and their influence on the colorimetry and physicochemical characteristics of the vegetable were evaluated. In the greenhouse, plants of the cultivar Natsume were sprayed with 11 oils selected in preliminary tests for phytotoxicity: bergamot, lemongrass, copaiba, Eucalyptus citriodora, blue gum, fennel, ginger, spearmint, sweet orange, lemon and clary sage (0.5%) and also the antibiotic Mycoshield® (3 g L-1). After 72 hours the plants were inoculated with Pectobacterium carotovorum subsp. carotovorum (Pcc-c). Buscando alternativas de alimentación que permitan reducir la pigmentación amarilla de la grasa en la canal del ganado bovino, se realizó un experimento con toretes finalizados en pastoreo, en el cual se evaluó el efecto de suplementación con ensilado de caña de azúcar (EC) en la digestibilidad, comportamiento productivo y color de la grasa en la canal. Se utilizaron 40 toretes con encastes de Brahaman, Suizo y Beefmaster (376 + 7.79 kg PV) mantenidos en pastoreo rotacional, en praderas establecidas con pasto estrella de África (Cynododn plestostachyus) por 90 d. The objective of this work was to evaluate combinations between acid digestion techniques and spectrophotometric quantification to measure chromium concentration in cattle feces. Digestion techniques were evaluated based on the use of nitric and perchloric acids, sulfuric and perchloric acids, and phosphoric acid. The chromium quantification in the solutions was performed by colorimetry and by atomic absorption spectrophotometry (AAS). When AAS was used, the addition of calcium chloride to the solutions as a releasing agent was also evaluated. Exchangeable aluminum evaluation in acid soils Scientia Agricola

One of the main factors limiting agricultural production in tropical climate regions is mainly related to the presence of exchangeable aluminum (Al3+) in highly weathered acid soils. Four methods of Al3+ determination extracted with neutral 1 mol L¹ KCl solution were evaluated: three colorimetric methods (aluminon plus ascorbic acid, and eriochrome cyanine R by FIA) and the usual titrimetric method with back-titration. Surface samples from 20 soils of different Brazilian regions, with active acidity (0.01 mol L¹ CaCl2 pH) ranging from very high to medium (3.82 to 5.52), were used. Response Surface Methodology (RSM) was applied to evaluate the chromatic features and sensory acceptance of emulsions that combine Soy Protein (SP) and red Guava Juice (GJ). The parameters analyzed were: instrumental color based on the coordinates a* (redness), b* (yellowness), L* (lightness), C* (chromaticity), h* (hue angle), visual color, acceptance, and appearance. The analyses of the results showed that GJ was responsible for the high measured values of red color, hue angle, chromaticity, acceptance, and visual color, whereas SP was the variable that increased the yellowness intensity of the assays. Abstract The aim of this research was compare methods for pigments extraction and color determination in different tomato for processing cultivars, and choose the most promising materials for the industry. The tomatoes for processing studied were of the IT761, H9992, H9553, AP533, Advance, N901, BRSena, U2006, HY26, HY37 and HY68 cultivars. The extraction yields of lycopene and β-carotene using acetone and the mixture of ethanol, acetone and hexane (10:10:20) were determined, and the parameters of color were determined by colorimetric and digitals image methods (Cielab and Hunterlab), besides other physicochemical characteristics. Método de determinação de açúcares redutores aplicável no sistema de pagamento de cana-de-açúcar. Repositório Alice

O objetivo deste trabalho foi avaliar um método colorimétrico de análise de açúcares redutores (AR) baseado na sua reação com cloreto de trifenil tetrazólio, de rápida execução, que pudesse ser aplicado nas usinas de cana-de-açúcar. Como a pureza do caldo de cana apresenta alta correlação com AR, desenvolveu-se, neste trabalho, uma equação de regressão linear (AR/RJ) que foi comparada com as de São Paulo (AR/SP) e Paraíba (AR/PB). A equação AR/SP, adotada atualmente no Rio de Janeiro, apresentou inclinação muito acentuada em comparação com as demais; isto indica a necessidade de se criar equação própria para cada região produtora de cana-de-açúcar.

Storage of cut Heliconia bihai (L.) cv. Lobster Claw flowers at low temperatures AGRIAMBI

The postharvest conservation of cut Heliconia flowers is an important factor to the success of commercialization, especially with regard to exportation. In the present study, the maximal storage time of cut inflorescences of Heliconia bihai cv. Lobster Claw at two different temperatures (12 and 19 °C) was evaluated and compared to laboratory conditions (25 °C, control treatment). Changes in visual quality, fresh weight and bract color (L*, a* and b*) were determined. The visual quality of the inflorescences and fresh weight decreased with time in all treatments. Tratamento térmico da madeira em atmosfera de glicerina PFB - Pesquisa Florestal Brasileira

O presente estudo visou avaliar tratamentos térmicos na madeira sob atmosfera de glicerina, que é resíduo da indústria de biodiesel, além de direcionar o produto obtido para os nichos de mercado da indústria madeireira. Foram selecionadas seis árvores de Eucalyptus grandis e E. cloeziana provenientes de plantios homogêneos com 21 anos. Dessas, foram confeccionados os corpos de prova e encaminhados para um banho de óleo laboratorial contendo glicerina bruta pré-aquecida a 50 °C. Os tratamentos consistiram no aquecimento da madeira em atmosfera de glicerina a 125 °C e 165 °C, por 30 min, além das amostras controle.
