This document describes the Israeli Social Accounting Matrix (SAM) for the year 2004, developed by the Agricultural and Food Policy Group at the University of Hohenheim. The SAM is a part of a larger research project which aims to analyse several economic, trade, and labour policies in the context of economic integration of agriculture between Israel and the West Bank. Data are obtained from various sources in Israel. Sources include the Israeli Central Bureau of Statistics (ICBS), the Central Bank of Israel (CBI), and the Israeli Tax Authority (ITA). Data from sources outside of Israel are used to fill-in some gaps in the domestic reports. This paper analyses the role of agro-systems preservation on making food choices. It employs the “Calibrate Auction-Conjoint Valuation method” (CACM), which relates hypothetical conjoint valuation of product attributes with real market behavior using real economic incentives. The paper also allows comparing the hypothetical and nonhypothetical valuations in order to value the difference between the theoretic and the incentive-compatible WTP for a same respondent and within a single experiment. A Censored Demand System Analysis of Fruits and Vegetables by Different Income Groups Using Micro Data AgEcon

This study examines demand for fruits and vegetables segmented by income levels in a complete demand system framework using the Consumer Expenditure Survey (CEX) from 2002 to 2006. Results show that disparities are found between high-income households and low-income households. Seasonal effects and demographic variables, such as household heads’ race and gender, region, household size and household composition, play an important role in fruit and vegetable consumption for both categories of household. In contrast, urban status, household heads’ educational level and age are not found to have a statistically significant impact for low-income households. A CHOICE EXPERIMENT MODEL FOR BEEF ATTRIBUTES: WHAT CONSUMER PREFERENCES TELL US AgEcon

This paper reports the main findings obtained from a U.S. consumer choice experiment regarding perceptions of food safety and meat attributes, and to the extent to which these attitudes translate into willingness-to-pay (WTP) for labeled ribeye steaks. The results indicate that USDA food safety inspection labels, labels indicating that the steak is tender, or the ability to trace back the animal to the farm are more important to consumers than country of origin labeling.

The underlying components of protection motivation theory (PMT; Rogers 1983) are explored through choice experiment-based analysis within a random utility framework, to account for some of the motivational, cognitive, and affective processes that likely affect celiacs’ propensity to use a novel health-risk reducing product. Those four groups of variables that are aimed to capture threat appraisal and coping appraisal processes as part of the standard PMT (Rogers 1975, 1983; Floyd et al. 2000) are found to contribute significantly to explaining the adaptive response of celiacs. A Coasian Approach to Efficient Water Allocation of a Transboundary River AgEcon

The United States and Mexico recently resolved a decade-old water dispute that required Mexico to repay the accumulated water debt within one year. A Coasian analysis estimates the social welfare gains attainable to each country under an alternative debt repayment scheme that allows repayment over a longer time horizon and in a combination of dollars and water, instead of solely in water. Assuming average water supply conditions, under the agreed 1-year repayment contract, U.S. compensation value is 534% greater and Mexico’s compensation cost is 60% less relative to when compensation is paid exclusively in water.

A Cohort Approach for Predicting Future Eating Habits: The Case of At-Home Consumption of Fresh Fish and Meat in an Aging Japanese Society AgEcon

Due to a rapidly aging society, stagnating per capita income and rather stable prices, traditional economic analyses methods lost their power in the 1990s to predict future food product consumption in Japan. This study, in part, remedies this problem by projecting future consumption of selected products, using a cohort approach with economic factors tentatively set aside. Per capita consumption of individual household members by age was derived by incorporating family age composition into household data classified by age groups of household head (HH). This comparative study seeks to distinguish the organic consumers of New Jersey from those of New York and Pennsylvania. The objective of the study is to document the characteristics of New Jersey organic produce consumers and compare the profile to New York and Pennsylvania consumers. Econometric methods will be used to model behavior and characteristics of consumers who frequently buy organic produce, and of consumers who are willing to pay 10 percent or more extra for organic produce than for conventional produce. Comparing models for New Jersey to those for New York and Pennsylvania will provide a framework for determining the significant characteristics unique to New Jersey's organic produce consumers.

A Comparison between Perception of Risk and Willingness to Serve Genetically Modified Foods AgEcon

The dichotomy between perceptions of the acceptability of risk associated with genetically modified (GM) foods and willingness to consume GM foods is investigated. Results indicate that some consumers are willing to consume GM foods even though they may perceive such foods as somewhat unsafe, with determinants such as self-perceived knowledge about the availability of GM foods and altruistic motives having positive and significant effects on their consumption decisions. Efforts toward decreasing perception of risk and ultimately increasing acceptance of and demand for GM foods should address issues related to their altruistic characteristics and outrage.

A Comparison of Actual and Hypothetical Willingness to Pay of Parents and Non-Parents for Protecting Infant Health: The Case of Nitrates in Drinking Water AgEcon

We estimate adults’ willingness to pay (WTP) to reduce health risks to their own or other families’ infants to test for altruism. A conjoint analysis of adults paying for bottled water found marginal WTP for reduction in risk of shock, brain damage, and mortality in the cash treatment of $2, $3.70, and $9.43, respectively. In the hypothetical market these amounts were $14, $26, and $66, indicating substantial hypothetical bias, although not unexpected due to the topic of infant health. Statistical tests confirm a high degree of altruism in our WTP results, and altruism held even when real money was involved.

A Comparison of Auction and Choice Experiment: An Application to Consumer Willingness to Pay for Rice with Improved Storage Management AgEcon

Experimental auction and discrete choice experiment are two popular value elicitation methods. Theoretically they should yield the same results but empirical results have been mixed (e.g., Lusk and Schroeder 2004, 2006; Corrigan et al. 2010.) This study uses both methods to determine consumers’ willingness to pay (WTP) for rice with improved insect control and for rice stored using Integrated Pest Management (IPM). A Comparison of Consumer Willingness to Pay for Four Types of Sweeteners AgEcon

As the U.S. consumption of sweeteners has increased, analysis of the demand for sweeteners has become more important. In this paper, consumer willingness-to-pay (WTP) for selected four types of sweeteners is evaluated. The four types of sweeteners are Kentucky grown pure maple syrup, artificially maple flavored syrup, sorghum syrup and molasses. Results suggest that consumers who are at high household income level (above $80,000) and with a smaller household size are likely to pay more for Kentucky grown maple syrup. Results show that there is no statistic difference for the annual household consumption among the four types of sweeteners.

A Comparison of U. S. and Canadian Consumers' Willingness to Pay for Red-Meat Traceability AgEcon

Auction experiments at locations in the US and Canada are used to determine consumers' willingness to pay for red-meat traceability and other enhanced food characteristics. Consumers in both countries are found to be willing to pay a positive amount for traceability, but would pay even more if traceability were bundled with other characteristics such as animal welfare or enhanced food safety. The results suggest a larger Canadian market for traceability, on a percentage basis, for beef than in the US.
