This report evaluates the United States and world corn and soybean markets for the 2010-2020 period using the Global Corn and Soybean Policy Simulation Model. This analysis is based on a series of assumptions about general economic conditions, agricultural policies, weather conditions, and technological change. Corn-based ethanol production has influenced United States corn industry. As long as the production of corn-based ethanol remains strong, corn prices will likely remain at a level higher than the long term average. A Battle of Taste and Environmental Convictions for Ecolabeled Seafood: A Contingent Ranking Experiment AgEcon

Consumers face pressure from environmental groups to modify their seafood purchase decisions based on concerns about fisheries' production practices. Existing research provides little information indicating whether seafood consumers are willing to change purchasing behavior based on a product's environmental attributes, to the exclusion of other attributes. We describe a contingent ranking experiment addressing preferences for fresh seafood, allowing for choices among different species, some displaying an ecolabel. Results suggest consumers consider overfishing sufficiently important to contemplate changing the species of fish they buy; however, they are unwilling to choose a less-favored species based solely on the presence of an ecolabel.

A Bilateral Comparison of Fruit and Vegetable Consumption: United States and Canada AgEcon

Many public programs promote diets rich in fruits and vegetables based on evidence of the derived health benefits. Still, produce consumption in the United States lags behind other nations, even its most culturally similar neighbor--Canada. This study uses a structural latent variable model to test the role played by quality and health information in explaining observed differences in produce consumption. The Alchian-Allen effect predicts that higher quality, higher absolute margin produce will be exported, suggesting quality may be an important demand factor in importing nations such as Canada. The results show that dietary health information is significant in expanding demands. Quality also promotes fruit consumption in Canada.

A structural latent variable model tests the role quality and information play in explaining observed differences in Canadian and U.S. produce consumption (5.0 vs. 3.5 servings/day). Dietary health information is significant in expanding demands. Quality promotes fruit consumption in Canada, consistent with the Alchian-Allen prediction.

A Censored Demand System Analysis of Fruits and Vegetables by Different Income Groups Using Micro Data AgEcon

This study examines demand for fruits and vegetables segmented by income levels in a complete demand system framework using the Consumer Expenditure Survey (CEX) from 2002 to 2006. Results show that disparities are found between high-income households and low-income households. Seasonal effects and demographic variables, such as household heads’ race and gender, region, household size and household composition, play an important role in fruit and vegetable consumption for both categories of household. In contrast, urban status, household heads’ educational level and age are not found to have a statistically significant impact for low-income households. A system of nine censored Engel curve equations was estimated for Hispanic households in the U.S.: grains, vegetables, fruits, milk, meat, legumes, fats, sugar, and beverages. Agricultural producers face many risks in their economic activity due to weather conditions, plant or animal diseases, price volatility, policy changes and so on. One of the management tools to deal with some of these risks is the crop insurance system. In Catalonia (North-East of Spain) farmers’ participation in crop insurance for vegetables is low. Only 5 percent of the vegetables area is insured, when in Spain, as a whole, this percentage is around 20 percent. Different reasons have been suggested to explain this low participation ratio such as low risk perception, risk diversification, insurance cost or crop damage assessment rules, among others. This paper reports the main findings obtained from a U.S. consumer choice experiment regarding perceptions of food safety and meat attributes, and to the extent to which these attitudes translate into willingness-to-pay (WTP) for labeled ribeye steaks. The results indicate that USDA food safety inspection labels, labels indicating that the steak is tender, or the ability to trace back the animal to the farm are more important to consumers than country of origin labeling.

The underlying components of protection motivation theory (PMT; Rogers 1983) are explored through choice experiment-based analysis within a random utility framework, to account for some of the motivational, cognitive, and affective processes that likely affect celiacs’ propensity to use a novel health-risk reducing product. Those four groups of variables that are aimed to capture threat appraisal and coping appraisal processes as part of the standard PMT (Rogers 1975, 1983; Floyd et al. 2000) are found to contribute significantly to explaining the adaptive response of celiacs. A COMPARATIVE ANALYSIS OF FOOD QUALITY ASSURANCE SCHEMES: THE CASE OF NEULAND AND EUREPGAP AgEcon

Food Quality Assurance Schemes (QAS) are widely applied in the European Union. Neuland and EurepGAP represent two different approaches. Neuland differentiates meat clearly by a strict emphasis on rules regarding animal welfare to provide consumers with meat produced at a high animal welfare standard. EurepGAP certifies the compliance to international accepted standards with regard to Good Agricultural Practise to ease the exchange of products throughout the supply chain. In terms of overall benefits and costs, the study showed that for both QAS the benefits clearly outweigh the costs. This paper compares the schemes and their implications for the agro-food chain.

A Comparison of Actual and Hypothetical Willingness to Pay of Parents and Non-Parents for Protecting Infant Health: The Case of Nitrates in Drinking Water AgEcon

We estimate adults’ willingness to pay (WTP) to reduce health risks to their own or other families’ infants to test for altruism. A conjoint analysis of adults paying for bottled water found marginal WTP for reduction in risk of shock, brain damage, and mortality in the cash treatment of $2, $3.70, and $9.43, respectively. In the hypothetical market these amounts were $14, $26, and $66, indicating substantial hypothetical bias, although not unexpected due to the topic of infant health. Statistical tests confirm a high degree of altruism in our WTP results, and altruism held even when real money was involved.

A Comparison Of Choice Experiments And Actual Grocery Store Behavior: An Empirical Application To Seafood Products AgEcon

In this paper we compare results from an in-store field experiment and a mail survey choice experiment (CE) to investigate CE’s capacity in predicting grocery store market share. For the comparison, we used three seafood products: freshwater prawns, marine shrimp, and lobster. CE estimates were obtained via four econometric models: the conditional logit, the random parameter logit, the heteroskedastic extreme value, and the multinomial probit. We found that the level of control in the grocery store experiment and the choice of econometric model influenced the capacity of CE to predict grocery store market shares.

A Comparison of Consumer Willingness to Pay for Four Types of Sweeteners AgEcon

As the U.S. consumption of sweeteners has increased, analysis of the demand for sweeteners has become more important. In this paper, consumer willingness-to-pay (WTP) for selected four types of sweeteners is evaluated. The four types of sweeteners are Kentucky grown pure maple syrup, artificially maple flavored syrup, sorghum syrup and molasses. Results suggest that consumers who are at high household income level (above $80,000) and with a smaller household size are likely to pay more for Kentucky grown maple syrup. Results show that there is no statistic difference for the annual household consumption among the four types of sweeteners.

The social safety nets in Mexico and the United States rely heavily on food assistance programs to ensure food security and access to safe and nutritious foods. To achieve these general goals, both countries' programs are exclusively paid for out of internal funds and both target low-income households and/or individuals. Despite those similarities, economic, cultural, and demographic differences between the countries lead to differences in their abilities to ensure food security and access to safe and nutritious foods. Food security—consistent access to enough food for an active, healthy life—is essential for health and good nutrition. The extent to which a nation’s population achieves food security is an indication of its material and social well-being. Differences in the prevalence of household level food insecurity between Canada and the United States are described at the national level and for selected economic and demographic subpopulations. A comparison of hypothetical survey rankings with consumer shopping behavior and product knowledge AgEcon

Hypothetical surveys are commonly used to elicit consumer behavior to guide product development, marketing, and labeling strategies. However, despite the prevalence of surveys in consumer food studies, previous work has not assessed the relationship between hypothetical responses and actual consumer behavior in real-world purchase situations.We explore whether attributes cited by consumers in surveys as being important to them when making decisions indeed factor into their product decision process in real-world markets. Evidence from a point of sale study of 702 pork purchasers indicates that there is a strong correspondence between hypothetical survey ratings and actual shopping behavior.
