Impact of legume flour addition on pasta structure: consequences on its in vitro starch digestibility Inra

Pasta is popular for its ease of cooking and its low glycaemic index (GI). This interesting nutritional property can be attributed to its specific compact structure generally described as a protein network entrapping starch granules. Despite this low GI, pasta is poor in fibres and lack some essential amino acids. To enhance its nutritional composition, pasta can be fortified with non-traditional ingredients such as legume flours. The objective of this study was to investigate the impact of legume flour addition on pasta structure and the inherent consequences on the in vitro digestibility of starch. La teigne du poireau (Acrolepiopsis assectella Z.) est connue en France pour ses dégâts sur poireaux (Allium porrum) légumes et porte-graines. Récemment, un nouveau type de dégât a été observé localement à un niveau économiquement préjudiciable sur les cultures d’oignons (Allium cepa). De nombreux orifices de pénétration et de sortie ainsi que des galeries superficielles dues aux larves d’A. assectella rendaient les lots de bulbes atteints impropres à la commercialisation. Ce type de dégât n’avait pas encore été signalé en France. Towards nitrogen self-sufficiency in mixed crop organic dairy systems: legumes and protein-rich plants contributions Inra

Nitrogen is known to be the limiting factor of productivity in organic systems. In low-input organic, mixed-crop dairy systems (MCDS) at the Mirecourt INRA station, studies are conducted on the contribution of associated cereal/protein-rich plant crops and concentrate mixes to the nitrogen self-sufficiency of the system. An agronomic and zootechnical analytical trial was established with nine types of cereal and protein-rich plants, and associated cereal/protein-rich plant crops were compared in plot trials in 2006 and 2007. The valorization of three cereal/protein concentrate mixes by 24 lactating dairy cows was tested in a zootechnical experiment during winter 2007. En France, les productions fruitières et légumières qui occupent moins de 2% de la SAU sont caractérisés par la diversité des espèces cultivées et les multiples systèmes de culture qui peuvent avoir des impacts environnementaux divers. Face aux nouveaux enjeux de développement d’une horticulture sensu lato à haute performance environnementale, l’Inra contribue aux travaux visant à réduire l’impact environnemental de ces cultures et à concevoir des systèmes de culture innovants.
