In the EU funded research project Ecropolis (www.ecropolis.eu), a comparative analysis of relevant sensory related requirements in regulations and standards for mainly processed organic products was made. A potential impact matrix of standards requirements on sensory properties of organic food has been made. The empirical verification of product qualities through consumers and sensory laboratory testing showed significant impacts for oil and salami, but no impact for apple, cookies, and tomato sauce.

Drying of fresh organic beef with differnt pretreatments Organic Eprints

Drying of foods is one of the oldest food preservation techniques, but it gains particular importance when regarding food quality and shelf life. Meat snacks are of growing interest because they are high in protein but low in fat and carbohydrates. In organic food production the use of preservatives is limited, and for this reason product specific drying strategies and pretreatments are essential. In this study fresh beef slices were treated with salt (0,5 % and 1 %) and salt and vinegar (0.5% and 5 %) and were dried at 70 °C in a convection dryer. Growing bargain power of supermarkets putting pressure on organic vegetable producers Organic Eprints

Using an analytic framework grounded in New Institutional Economics and property rights theory, concepts of power and control over access to critical assets along a supply chain has laid the foundation for the analysis of the development of the organic vegetable chain in Denmark. Two commodities were chosen as detailed case studies: organic carrots and iceberg lettuce. By combining qualitative and quantitative data bargain power was revealed to be growing at the retailer node, and producer-retailer relations were examined in detail. Utgangspunkt for rapporten er et ønske fra et bakeri om å etablere en lokal verdikjede for korn til mat i Møre og Romsdal. Aktører fra verdikjeden har sammen med veiledere sett på ulike løsninger som er etablert i Trøndelag. I tillegg er det tatt kontakt med andre gards- og bygdemøller i Midt-Norge for å innhente opplysninger om hva som finnes. For å støtte opp om en videre utvikling i Møre og Romsdal foreslår vi å gjennomføre feltforsøk innen bygg og havre, og i tillegg følge opp det nettverket som er etablert.

Increasing consumption of organic products in globalised food chains will require the involvement of thousands more smallholder farmers in many regions of the world. A study of Egypt, China and Uganda identified the three key factors of property rights regimes, cultural differences and social organisation as determents of the supply chain organization and farmers’ degree of direct integration in the export markets. Die Untersuchungen konzentrieren sich auf den besonderen Aspekt der Qualitätserhaltung ökologischer Produkte in der Nacherntephase entlang der gesamten Wertschöpfungskette. Organic Certification in the iPOPY Countries and Germany – Current Status and Future Challenges Organic Eprints

The paper is part of the proceedings of an iPOPY seminar. Organic production has to be certified and labeled along the supply chain in order to maintain trust in organic premium products. Since January 1st 2009, organic certification in Europe is subject to the new Council Regulation (EC) No 834/2007 of 28 June 2007. This regulation specifically excludes so-called mass catering operations. It is up to EU member states to apply national rules or private standards insofar as these comply with community law. The paper presents the state of the art and upcoming changes of organic certification of out-of-home catering in Germany with regard to Norway, Finland, Denmark, and Italy.

Organising supply chains of organic products for Italian school meals - The case of the province and of the city of Piacenza Organic Eprints

The paper is part of the proceedings of an iPOPY seminar. The authors describe, how supply chains of organic school food might be organised in a sustainable way in order to serve high quality food to pupils. They present a best practice case of controlled food chains (filiera controllata) from Italy, the European champion of organic school food. From the province and the city of Piacenza in the region of Emilia-Romagna, we can learn a lot about a short and certified organic food-chain, a wide range of regional and organic products provided through a shared logistic organisation among local partners, and specific tender procedures.

Performance simulation of a Heat Pump Drying System using R744 as refrigerant Organic Eprints

Convective drying requires significant amount of thermal energy in order to evaporate water from the product. In most cases this energy, present as latent heat in removed drying air, is not recovered. However, the simultaneous availability of waste heat and thermal energy demand is ideal for heat pump applications. This case study evaluates the performance of CO2 as refrigerant in heat pump assisted drying system for grain drying. The system was designed for a thermal capacity of up to 400 kW. This allows a mobile design in order to move the heat pump system to different drying locations. Providing organic school food for youths in Europe - Policy strategies, certification and supply chain management in Denmark, Finland, Italy and Norway Organic Eprints
In the proceedings of an iPOPY seminar, some results of the research project were presented. First of all, Anne-Kristin Løes and Benjamin Nölting give an overview of the iPOPY project and its first results. Controlled partial freezing or superchilling of food products can result in significant shelf life extensions during the cold chain. Between 10 % - 20 % of the foods water content is frozen and the ice functions as a thermal inertia during storage and transportation. Superchilling in industry can reduce the use of freezing/thawing for production buffers and thereby reduce labor, energy costs and product weight losses. Superchilled products sustain quality parameters commonly associated with fresh/unfrozen products, however some increase in product drip loss may occurring during storage. The greatest challenge for agriculture is to reduce the trade-offs between productivity and long-term sustainability. Therefore, it is interesting to analyse organic agriculture which is a given set of farm practices that emphasise ecological sustainability. Organic agriculture can be characterised as being less driven by off-farm inputs and being better embedded in ecosystem functions. The literature on public goods and non-commodity outputs of organic farms is overwhelming.
